    • 1 CUP SOFTENED SWEET BUTTER
    • 1 CUP SUGAR
    • 1 EGG
    • 1 TABLESPOON PURE VANILLA
    • 2 CUPS FLOUR
    • 1/4 TEASPOON SALT


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. STEP 1: CREAM BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY. ADD EGG AND BEAT WELL. BLEND IN VANILLA.
    3. COMBINE FLOUR AND SALT AND ADD TO CREAMED MIXTURE.
    4. STEP 2: DROP DOUGH BY ROUNDED TEASPOONFULS ONTO UNGREASED COOKIE SHEETS.
    5. BAKE 10 TO 12 MINUTES OR UNTIL GOLDEN BROWN.
    6. MAKES 36 COOKIES
    7. VARIATIONS:
    8. CHOCOLATE CHOCOLATE MINT COOKIES: IN STEP 1, ADD 1 TEASPOON MINT EXTRACT WITH VANILLA EXTRACT. ADD 1/2 CUP COCOA POWDER WITH FLOUR AND SALT. CREAM MIXTURE AND STIR IN 2/3 CUPS CHOCOLATE CHIPS.
    9. LEMON COOKIES: IN STEP 1, SUBSTITUTE 2 TESPOONS LEMON EXTRACT FOR VANILLA. ADD 2 TEASPOONS GROUND GINGER WITH FLOUR AND SALT. CREAM MIXTURE. IN STEP 2, ROLL DOUGH INTO 1" BALLS AND PLACE ON UNGREASED COOKIE SHEETS. FLATTEN COOKIE DOUGH WITH THE BOTTOM OF A GLASS INTO 2" CIRCLES. BAKE 10 TO 12 MINUTES. SPRINKLE BAKED COOKIES WITH CONFECTIONERS' SUGAR.
    10. CRANBERRY ALMOND COOKIES: IN STEP 1, SUBSTITUTE 1`TEASPOON ALMOND EXTRACT FOR VANILLA. STIR 1/2 CUP DRIED CRANBERRIES AND 1/2 CUP CHOPPED TOASTED ALMONDS TO CREAMED FLOUR MIXTURE. CONTINUE WITH STEP 2.
