    STRAWBERRY CREPES WITH ORANGE SAUCE

    CREPES ARE ONE OF MY FAVORITE DISHES TO MAKE. IMAGINATION IS ALL YOU NEED TO CREATE A ONE OF A KIND CREPE.


    List of Ingredients


    • CREPE
    • 1/2 CUP EGG SUBSTITUTE
    • 1/2 CUP MILK
    • 1 TABLESPOON MELTED BUTTER
    • 3/4 TEASPOON VANILLA
    • 1/2 CUP + 2 TABLESPOONS CORNSTARCH
    • 1/4 TEASPOON SALT
    • 3 TEASPOONS SUGAR
    • NON STICK COOKING SPRAY
    • FILLING
    • 1 ( 10 OUNCE JAR ) STRAWABERRY FRUIT SPREAD
    • 1 CUP COLD WATER
    • 2 TABLESPOONS CORNATARCH
    • 3 CUPS THINLY SLICED STRAWBERRIES
    • TOPPING
    • 1/2 CUP ORANGE MARMALADE FRUIT SPREAD
    • 1/4 CUP WATER
    • 1 CUP THINLY SLICED STRAWBERRIES


    Instructions


    1. CREPES:
    2. PLACE EGG SUBSTITUTE, MILK, MARGARINE AND VANILLA IN A BLENDER. BLEND 15 SECONDS, ADD CORNSTARCH, SALT AND SUGAR. BLEND 30 SECONDS LONGER UNTIL SMOOTH.
    3. SPRAY A 6" NONSTICK SKILLET WITH COOKING SPRAY, HEAT OVER MEDIUM HIGH HEAT. POUR 2 TABLESPOONS CREPE BATTER INTO SKILLET. IMMEDIATELY ROTATE SKILLET TO SWIRL BATTER OVER ENTIRE BOTTOM OF SKILLET. COOK 1 TO 2 MINUTES, OR UNTIL CREPE IS GOLDEN BROWN AND TO IS DRY. TURN CREPE AND COOK 30 SECONDS. PLACE CREPES ON PLATE WITH WAXED PAPER TO SEPERATE. REPEAT WITH REMAINING BATTER UNTIL ALL BATTER IS USED.
    4. FILLING:
    5. HEAT STRAWBERRY FRUIT SPREAD IN A SMALL SAUCEPAN OVER MEDIUM HEAT. BLEND 1 CUP WATER AND CORNSTARCH IN A SMALL BOWL UNTIL SMOOTH, WHISK INTO FRUIT SPREAD. INCREASE HEAT TO MEDIUM HIGH AND BRING TO A BOIL, STIRRING CONSTANTLY. BOIL 1 MINUTE. TRANSNFER MIXTURE TO A MEDIUM BOWL. STIR IN 3 CUPS SLICED STRAWBERRIES, COOL SLIGHTLY.
    6. SAUCE:
    7. HEAT ORANGE MARMALADE FRUIT SPREAD WITH 1/4 CUP WATER IN A SAUCEPAN OVER LOW HEAT UNTIL SMOOTH.
    8. ASSEMBLING:
    9. SPREAD 1/4 CUP FILLING DOWN CENTER OF EACH CREPE, ROLL TIGHTLY. REPEAT WITH REMAINING CREPES. PLACE 2 CREPES ON EACH SERVING PLATE. DIVIDE 1 CUP STRAWABERRIES AMONG CREPES. TOP EACH SERVING WITH 2 TABLESPOONS OF ORANGE SAUCE.


    Final Comments


    YOU CAN USE FLOUR INSTEAD OF CORNSTARCH. IF YOU DO, YOU WILL HAVE TO LET THE BATTER REST FOR 30 MINUTES BEFORE COOKING. WITH CORNSTARCH, YOU CAN COOK THEM IMMEDIATELY, PLUS CORNSTARCH CREPES HAVE A SILKIER TEXTURE THAN THE ONES MADE WITH FLOUR.
