    List of Ingredients


    • 1 1/2 LBS BEEF FLANK STEAK
    • 1 CUP CHOPPED ONION
    • 1 GREEN SWEET PEPPER, CUT INTO 1/2" PIECES
    • 1 JALAPENO PEPPER, CHOPPED
    • 1 TABLESPOON CILANTRO
    • 2 CLOVES GARLIC, MINCED OR 1/4 TEASPOON GARLIC POWDER
    • 1 TEASPOON CHILI POWDER
    • 1 TEASPOON GROUND CUMIN
    • 1 TEASPOON GROUND CORIANDER
    • 1/2 TEASPOON SALT
    • 8 OUNCE CAN CHOPPED TOMATOES
    • 12 ( 8") FLOUR TORTILLAS
    • TOPPINGS: SOUR CREAM, GUACAMOLE, SHREDDED CHEDDAR CHEESE, SALSA


    Instructions


    1. CUT FLANK STEAK INTO 6 PORTIONS. IN ANY SIZE CROCKPOT, COMBINE MEAT, ONION, GREEN SWEET PEPPER, JALAPENO PEPER, CILANTRO, GARLIC, CHILI POWDER, CUMIN, CORRIANDER AND SALT. ADD TOMATOES. COVER AND COOK ON "LOW" FOR 8 TO 10 HOURS OR "HIGH" 4 TO 5 HOURS.
    2. REMOVE MEAT FROM CROCKPOT AND SHRED. RETURN MEAT TO CROCKPOT AND STIR.
    3. TO SERVE FAJITAS: SPREAD MEAT MIXTURE INTO FLOUR TORTILLAS AND TOP WITH ABOVE MENTIONED TOPPINGS IF DESIRED. ROLL UP TORTILLAS.
    4. SERVES 12
