    List of Ingredients


    • 1 1/2 CUPS CHILLED WHIPPING CREAM
    • 1 1/4 CUPS PURCHASED LEMON CURD OR LEMON PIE FILLING
    • 2 1/2 TABLESPOONS FRESH LEMON JUICE
    • 2 TABLESPOONS GRATED LEMON PEEL
    • 3 1/2 CUPS FRESH RASPBERRIES, 3 ( 1/2 PINT BASKETS)


    Instructions


    1. WITH ELECTRIC MIXER, BEAT CREAM IN A LARGE BOWL UNTIL STIFF PEAKS FORM. MIX LEMON CURD OR LEMON PIE FILLING, LEMON JUICE AND LEMON PEEL IN ANOTHER LARGE BOWL TO BLEND. FOLD IN WHIPPING CREAM AND 2 1/2 CUPS RASPBERRIES.
    2. DIVIDE LEMON MIXTURE AMONG 6 ( 8 TO 10 OZ ) PARFAIT OR DESSERT CUPS. COVER AND CHILL UNTIL PARFAITS ARE COLD AND SET, 30 MINUTES OR OVERNIGHT.
    3. SPRINKLE WITH REMAINING 1 CUP RASPBERRIES ON TOP AND SERVE IMMEDIATELY.
