- 1 CUP HALF AND HALF
- 1/2 CUP REALEMON LEMON JUICE FROM CONCENTRATE ( FROZEN FOOD SECTION)
- 2 EGG YOLKS
- 1/4 CUP ( 1/2 STICK ) BUTTER CUT INTO PIECES
- 1/2 CUP SOUR CREAM
- 2 TABLESPOONS SEEDLESS RASPBERRY PRESERVES
- 1/2 CUP CONFECTIONERS' SUGAR
- 1 CUP WHIPPING CREAM
- 1 PINT FRESH RASPBERRIES
Instructions
- IN A SAUCE PAN, COOK SUGAR, FLOUR, HALF AND HALF, LEMON JUICE AND EGG YOLKS OVER MEDIUM HEAT WHISKING CONSTANTLY APPROXIMATELY 10 MINUTES OR UNTIL MIXTURE THICKENS. REMOVE PUDDING FROM HEAT AND WHISK IN BUTTER. COOL AND CHILL IN REFRIGERATOR.
- STIR TOGETHER SOUR CREAM, PRESERVES AND CONFECTIONERS' SUGAR. SET ASIDE.
- BEAT WHIPPING CREAM AT MEDIUM SPEED WITH AN ELECTRIC MIXER UNTIL STIFF PEAKS FORM, FOLD IN SOUR CREAM/RASPBERRY MIXTURE. CHILL
- SPOON 1 LAYER OF PUDDING MIX INTO PARFAIT GLASS,THEN RASPBERRIES AND THEN THE SOUR CREAM MIXTURE. TOP WITH A LAYER OF PUDDING MIX, SPRINKLE WITH RASPBERRIES AND A DOLLOP WITH THE SOUR CREAM MIXTURE. SERVE IMMEDIATELY.
