- 12 MEDIUM APRICOTS, PARED AND PITTED
- 2 TABLESPOONS APRICOT BRANDY OR 2 TABLESPOONS APRICOT NECTAR
- 1 CUP THAWED COOL WHIP
- 1 TEASPOON SUGAR
- STRAWBERRIES FOR GARNISHING
Instructions
- PUREE APRICOTS IN A FOOD PROCESSOR OR BLENDER UNTIL VERY SMOOTH. REMOVE TO A MEDIUM METAL MIXING BOWL.
- ADD BRANDY OR NECTAR, COOL WHIP AND SUGAR TO APRICOT PUREE MIXING WELL. FREEZE, COVERED 30 MINUTES OR UNTIL JUST FIRM.
- JUST BEFORE SERVING, BEAT THE APRICOT MIXTURE WITH A WIRE WHISK UNTIL SMOOTH.
- DIVIDE AMONG 4 DESSERT DISHES AND TOP EACH WITH A STRAWBERRY.
