CHERRY STREUSEL DELIGHTS
List of Ingredients
- 6 TABLESPOONS SOFTENED BUTTER
- 1/3 CUP PACKED LIGHT BROWN SUGAR
- 1 EGG
- 1 TEASPOON VANILLA
- 1 CUP FLOUR
- 1/2 TEASPOON BAKING POWDER
- PINCH OF SALT
- 1 1/4 POUNDS BING CHERRIES, STEMMED AND PITTED
- ***********************STREUSEL TOPPING*************************
- 3/4 CUPS FLOUR
- 3/4 CUPS PACKED LIGHT BROWN SUGAR
- 1/2 CUP BUTTER CUT INTO SMALL PIECES
- WHIPPED TOPPING
Instructions
- PREHEAT OVEN TO 350°. GREASE A 8 X 8" SQUARE BAKING PAN.
- BEAT TOGETHER BUTTER AND SUGAR IN MEDIUM SIZE BOWL UNTIL CREAMY. STIR IN EGG AND VANILLA, MIXING WELL.
- MIX FLOUR, BAKING POWDER AND SALT IN ANOTHER BOWL. STIR FLOUR MIXTURE INTO BUTTER MIXTURE TO MAKE A DOUGH. PAT DOUGH INTO EVEN LAYER OVER BOTTOM OF PREPARED PAN.
- IN THE SAME BOWL, MIX FLOUR AND SUGAR. USING YOUR FINGERS OR A PASTRY BLENDER, WORK IN BUTTER UNTIL MIXTURE HOLDS TOGETHER.
- SPOON CHERRIES INTO BAKING PAN. SPRINKLE STREUSEL OVER TOP. BAKE FOR 50 MINUTES OR UNTIL TOPPING IS GOLDEN BROWN. COOL IN PAN 10 MINUTES. CUT INTO RECTANGLES. SERVE WARM OR AT ROOM TEMPERATURE OR CHILLED WITH WHIPPED TOPPING.
