CHOCOLATE RUM BALLS
List of Ingredients
- 2 CUPS CHOCOLATE WAFER COOKIE CRUMBS
- 1 CUP GROUND PECANS
- 1/2 CUP CONFECTIONERS' SUGAR
- 1/3 CUP RUM
- 3 TABLESPOONS CORN SYRUP
- 1/2 CUP MINI CHOCOLATE CHIPS
- 3/4 CUPS CHOCOLATE SPRINKLES
Instructions
- IN A BOWL, COMBINE COOKIE CRUMBS, PECANS, SUGAR, RUM AND CORN SYRUP. MIX ALL INGREDIENTS WELL.
- SHAPE INTO 1" BALLS MEASURING ABOUT 1 TABLESPOON OF MIXTURE. LINE A TRAY WITH PARCHMENT PAPER OR WAX PAPER. PLACE BALLS ON TRAY AND REFRIGERATE UNTIL COLD.
- IN A DOUBLE BOILER USING HOT ( NOT BOILING WATER), MELT CHOCOLATE UNTIL SMOOTH. COOL SLIGHTLY.
- DIP BALLS INTO MELTED CHOCOLATE WITH ONLY A THIN COAT OF CHOCOLATE. ROLL IMMEDIATELY INTO CHOCOLATE SPRINKLES. PLACE ON PARCHMENT LINED TRAY UNTIL CHOCOLATE IS SET.
