    CHOCOLATE RUM BALLS


    List of Ingredients


    • 2 CUPS CHOCOLATE WAFER COOKIE CRUMBS
    • 1 CUP GROUND PECANS
    • 1/2 CUP CONFECTIONERS' SUGAR
    • 1/3 CUP RUM
    • 3 TABLESPOONS CORN SYRUP
    • 1/2 CUP MINI CHOCOLATE CHIPS
    • 3/4 CUPS CHOCOLATE SPRINKLES


    Instructions


    1. IN A BOWL, COMBINE COOKIE CRUMBS, PECANS, SUGAR, RUM AND CORN SYRUP. MIX ALL INGREDIENTS WELL.
    2. SHAPE INTO 1" BALLS MEASURING ABOUT 1 TABLESPOON OF MIXTURE. LINE A TRAY WITH PARCHMENT PAPER OR WAX PAPER. PLACE BALLS ON TRAY AND REFRIGERATE UNTIL COLD.
    3. IN A DOUBLE BOILER USING HOT ( NOT BOILING WATER), MELT CHOCOLATE UNTIL SMOOTH. COOL SLIGHTLY.
    4. DIP BALLS INTO MELTED CHOCOLATE WITH ONLY A THIN COAT OF CHOCOLATE. ROLL IMMEDIATELY INTO CHOCOLATE SPRINKLES. PLACE ON PARCHMENT LINED TRAY UNTIL CHOCOLATE IS SET.
