    FUDGY CHOCOLATE RASPBERRY CAKE

    THIS IS A VERY FUDGY, CHOCOLATY CAKE. GUARANTEED TO BE A WINNER AT ANY GATHERING. SERVE THIN SLICES AS IT IS VERY DECADENT AND RICH. I MAKE THIS DECADENT DESSERT FOR SPECIAL OCCASIONS AND HOLIDAYS.


    List of Ingredients


    • 1 2/3 CUPS SEMI-SWEET CHOCOLATE CHIPS
    • 2 OUNCES SEMI SWEET CHOCOLATE CHIPS
    • 3/4 CUPS SWEET BUTTER, NO SUBSTITUTIONS CUT UP
    • 1/3 CUPS WATER
    • 6 EGGS
    • 1 CUP SUGAR
    • 1 TEASPOON VANILLA
    • 3 TABLESLPOONS RASPBERRY LIQUEUR OR EXTRACT
    • SWEETENED WHIPPED CREAM
    • RASPBERRY SAUCE


    Instructions


    1. PREHEAT OVEN TO 325°. GREASE AND FLOUR A 9" OR 10" SPRINGFORM PAN.
    2. MELT THE CHOCOLATES, BUTTER AND WATER IN A SAUCEPAN OVER LOW HEAT, STIRRING WITH A WHISK TILL MELTED AND SMOOTH. REMOVE FROM HEAT AND COOL TO ROOM TEMPERATURE. SET ASIDE.
    3. IN A MIXER BOWL, BEAT EGGS, SUGAR AND VANILLA ON HIGH SPEED FOR APPROXIMATELY 10 MINUTES TILL LIGHT AND TRIPLED IN VOLUME. FOLD IN MELTED CHOCOLATE AND LIQUEUR OR RASPBERRY EXTRACT.
    4. POUR BATTER INTO PREPARED SPRINGFORM PAN. PLACE ON A BAKING SHEET WITH SIDES. PLACE IN MIDDLE OF OVEN AND BAKE FOR 35 TO 40 MINUTES, DEPENDING ON YOUR OVEN, OR UNTIL CAKE IS PUFFED ON OUTER EDGES AND CENTER IS FIRM WHEN YOU SHAKE THE PAN LIGHTLY. THE CAKE SHOULD FEEL FIRM ALL OVER, EXCEPT IN THE CENTNER.
    5. REMOVE PAN FROM OVEN AND PLACE ON A WIRE RACK TO COOL FOR 20 TO 30 MINUTES. LOOSEN RING OF SPRINGFORM PAN, BUT DO NOT REMOVE. ( YOU SHOULD USE A THIN METAL SPATULA AND GENTLY RUN IT AROUND THE SIDES OF PAN IN ONE MOTION TO LOOSEN SLIGHTLY) LET CAKE REST IN PAN UNTIL COMPLETELY COOLED. REMOVE THE CAKE FROM PAN. COVER AND CHILL FOR 6 HOURS OR OVER NIGHT. OVER NIGHT IS BEST.
    6. SPREAD THE TOP WITH RASPBERRY SAUCE ALLOWING FOR SOME SAUCE TO GO OVER THE SIDES.
    7. PLACE THE WHIPPED CREAM IN A PASTRY BAG AND PIPE WHATEVER TYPE OF DESIGN YOU WISH COVERING THE WHOLE TOP OR SPREAD THE WHIPPED CREAM. KEEP IN REFRIGERATOR UNTIL READY TO SERVE.
    8. WHEN READY TO SERVE, DRIZZLE SOME RASPBERRY SAUCE ON PLATE AND CUT A SMALL SLICE OF CAKE AND PLACE ON TOP.
