List of Ingredients
- 18 1/4 OUNCE YELLOW CKE MIX
- 3 ( 3.4 OUNCE PACKAGES ) EACH INSTANT VANILLA PUDDING MIX
- 4 CUPS COLD MILK
- 1 1/2 TEASPOONS COCONUT EXTRACT
- 8 OUNCE SOFTENED CREAM CHEESE
- 20 OUNCE CRUSHED PINEAPPLE, WELL DRAINED
- 2 CUPS HEAVY CREAM, WHIPPED AND SWEETENED
- 2 CUPS TOASTED FLAKED COCONUT
Instructions
- PREHEAT OVENT TO 350°.GREASE 2 ( 13 X 9" BAKING PANS AND SET ASIDE.
- MIX CAKE BATTER ACCORDING TO PACKAGE DIRECTIONS. POUR INTO PREPARED PANS AND BAKE FOR 15 MINUTES OR UNTILL THE CAKES TEST DONE. COOL COMPLETELY.
- IN A LARGE MIXING BOWL, COMBINE THE PUDDING MIXES AND MILK AND COCONUT EXRACT AND BEAT FOR 2 MINUTES. ADD THE CREAM CHEESE AND BEAT WELL. STIR IN PINEAPPLE.
- SPREAD OVER THE COOLED CAKES. TOP WITH WHIPPED CREAM AND SPRINKLE WITH TOASTED COCONUT.
- CHILL FOR AT LELAST 2 HOURS OR OVERNIGHT.
- 24 SERVINGS.
- I HAVE PREPARED THESE DESSERTS AND TIGHTLY COVERED THEM AND PLACED THEM IN THE FREEZER. THEY KEEP UP TO 1 MONTH. WHEN READY TO SERVE, REMOVE FROM FREEZER AND PLACE IN REFRIGERATOR OVERNIGHT TO THAW OUT. REFRIGERATE ANY LEFTOVERS.
- IF YOU LIKE, YOU CAN TOP THE CREAM CHEESE/PUDDING MIX WITH ONE OF MY STRAWBERRY SAUCES WHICH CAN BE FOUND UNDER THE CATAGORY OF FRUIT TOPPINGS. THEN SPREAD WITH WHIPPED TOPPING AND TOASTED COCONUT. THE COMBINATION IS JUST OUT OF THIS WORLD.
