    List of Ingredients


    • 2 SHEETS FROZEN PUFF PASTRY
    • 3 TABLESPOONS STRAWBERRY FRUIT SPREAD
    • 2 TABLESPOONS SUGAR
    • 2 TABLESPOONS WATER
    • 1/3 CUP PREPARED LEMON CURD OR LEMON PIE FILLING
    • 3 1/2 CUPS FRESH STRAWBERRIES
    • 3 CUPS SWEETENED WHIPPED CREAM OR FROZEN WHIPPED TOPPIING


    Instructions


    1. THAW PASTRY SHEETS AT ROOM TEMPERATURE FOR 30 MINUTES.
    2. PREHEAT OVEN TO 400°.
    3. UNFOLD PASTRY ON A LIGHTLY FLOURED SURFACE. ROLL EACH SHEET INTO A 14 X 12" RECTANGLE. SPRINKLE EACH SHEET WITH 1 TABLESLPOON SUGAR.
    4. PLACE ON BAKING SHEETS. PLACE A WIRE RACK ON TOP OF EACH PASTRY SHEET. BAKE FOR 15 MINUTES OR UNTIL GOLDEN BROWN. REMOVE WIRE RACKS. REMOVE FROM BAKING SHEETS AND COOL ON WIRE RACKS.
    5. CUT EACH PASTRY SHEET CROSSWISE DIAGONALLY, FORMING AND "X". THEN CUT IN HALF LENGTHWISE AND CROSSWISE, MAKING 16 TRIANGLES IN ALL.
    6. IN A MEDIUM BOWL, GENTLY FOLD LEMON CURD OR PIE FILLING INTO WHIPPED CREAM. SET ASIDE.
    7. IN A SMALL SAUCEPAN OVER MEDIUM HIGH HEAT, HEAT FRUIT SPREAD OR PRESERVES AND WATER STIRRING CONSTANTLY. STIR IN SLICED STRAWBERRIES. REMOVE FROM HEAT.
    8. SPREAD EACH OF 8 PASTRY TRIANGLES WITH ABOUT 1/3 CUP OF LEMON MIXTURE AND TOP WITH ABOUT 1/4 CUP STRAWBERRIES. COVER WITH REMAINING PASTRY TRIANGLES.
    9. SERVE WITH REMAINING STRAWBERRIES.

    12. IN A CHILLED BOWL, BEAT 1 1/2 CUPS HEAVY CREAM, WITH 3 TABLESPOONS SUGAR AND 1/2 TEASPOON VANILLA EXTRACT UNTIL STIFF PEAKS FORM.
