    List of Ingredients


    • 1 CUP SUGAR
    • 1 CUP HEAVY CREAM
    • 1 TO 2 TABLESPOONS DARK RUM
    • 4 FIRM BUT RIPE BANANAS
    • 1/4 CUP CHOPPED AND TOASTED MACADAMIA NUTS


    Instructions


    1. PREHEAT OVEN TO 450°. BUTTER A LARGE OVEN PROOF DISH THAT WILL HOLD THE BANANAS IN A SINGLE LAYER.
    2. IN A HEAVY SAUCEPAN, COMBINE THE SUGAR WITH 1/3 CUP WATER AND BRING TO A BOIL OVER HIGH HEAT, STIRRING CONSTANTLY. CONTINUE TO BOIL, OCCASIONALLY BRUSHING DOWN THE SIDES OF THE PAN WITH A BRUSH DIPPED IN COLD WATER UNTIL THE SYRUP IS GOLDEN BROWN, ABOUT 5 MINUTES. REMOVE FROM HEAT AND SLOWLY STIR IN THE CREAM UNTIL COMBINED, ( BE CAREFUL THE MIXTURE WILL BUBBLE UP ). RETURN THE PAN TO LOW HEAT AND ADD THE RUM AND STIR.
    3. ARRANGE THE BANANAS IN THE DISH, POUR THE SAUCE OVER THEM AND TURN TO COAT. BAKE, TURNING OCCASIONALLY, FOR 6 TO 10 MINUTES, OR UNTIL HEATED THROUGH.
    4. TRANSFER THE BANANAS AND SAUCE TO A SERVING DISH AND SPRINKLE THE NUTS OVER THE TOP.
    5. TO TOAST MACADAMIA NUTS, PLACE IN A SMALL SKILLET OVER MEDIUM HEAT AND TOAST, STIRRING OCCASIONALLY, UNTIL GOLDEN BROWN, 2 TO 3 MINUTES. REMOVE FROM THE SKILLET AND LET COOL.
