    VIC'S FROM SCRATCH TIRAMISU

    MASCARPONE CHEESE IS VERY HARD TO FIND, AND IF YOU DO, IT IS VERY EXPENSIVE. I HAVE OVER THE YEARS EXPERIMENTED WITH THE INGREDIENTS TO COME UP WITH THE PERFECT HOMEMADE MASCARPONE CHEESE FROM SCRATCH. THIS ONE IS A WINNER.


    List of Ingredients


    • 2 PACKAGES LADYFINGERS
    • 1/2 TO 3/4 CUP OF ESPRESSO COFFEE
    • 3 TABLESPOONS KAHULA OR BAILEY'S IRISH CREAM LIQUEUR
    • 6 SEPERATED EGGS
    • 6 TABLESPOONS SUGAR
    • 3 ( 8 OUNCE PACKAGES) CREAM CHEESE, SOFTENED
    • 1/2 CUP HEAVY CREAM
    • 1/4 CUP SOUR CREAM
    • COCOA POWDER


    Instructions


    1. COMBINE THE ESPRESSO COFFEE WITH THE LIQUEUR AND MIX WELL. SET ASIDE.
    2. SEPERATE THE LADYFINGER SHEETS LEAVING THEM INTACK. PLACE ON A BAKING SHEET. BRUSH ALL OF THE LADYFINGERS WITH THE COFFEE/LIQUEUR MIXTURE, USING ALL OF THE COFFEE MIX. SET ASIDE.
    3. IN A MIXER BOWL, COMBINE THE CREAM CHEESE, HEAVY CREAM AND SOUR CREAM, BEAT UNTIL WELL COMBINED AND SMOOTH. REMOVE FROM BOWL AND PLACE IN ANOTHER BOWL. WASH THE BOWL AND BEATER WELL UNDER HOT SOAPY WATER, DRY WELL.
    4. IN MIXER BOWL, BEAT EGG YOLKS AND SUGAR UNTIL THICK AND LEMON IN COLOR, APPROXIMATELY 5 MINUTES. ADD THE CREAM CHEESE MIXTURE AND BEAT ON LOW TO MEDIUM SPEED UNTIL TOTALLY COMBINED. POUR MIXTURE INTO A LARGE BOWL AND SET ASIDE. WASH THE BOWL AND BEATER IN HOT SOAPY WATER, MAKING SURE ALL TRACES OF GREASE IS REMOVED, DRY COMPLETELY.
    5. IN MIXER BOWL BEAT THE EGG WHITES UNTIL SOFT PEAKS FORM ABOUT 2 MINUTES ON MEDIUM TO HIGH SPEED. BE CAREFUL NOT TO OVER BEAT.
    6. FOLD THE BEATEN WHITES INTO THE EGG/CHEESE MIXTURE, USING A RUBBER SPATULA, IN A OVER AND UNDER MOTION UNTIL COMPLETELY COMBINED.
    7. PLACE THE PREPARED LADYFINGERS IN A 9 X 13" BAKING PAN ( 4 ROWS OF LADYFINGERS ). SPREAD WITH HALF OF THE CHEESE MIXTURE OVER THE LADYFINGERS, SPREADING EVENLY, SIFT COCOA POWDER OVER EVENLY ON TOP, COVERING WELL. PLACE REMAINING LADYFINGERS ON TOP, SPREAD WITH REMAINING CREAM CHEESE MIXTURE, SPREADING OUT EVENLY, SIFT WITH COCOA POWDER, COVERING ENTIRE TOP. COVER AND CHILL IN REFRIGERATOR FOR UP TO 4 HOURS BEFORE SERVING.
    8. CUT 3" SQUARES AND PLACE ON PLATES.


    Final Comments


    THIS TIRAMISU IS DECADENT AND OUT OF THIS WORLD WITH WONDERFUL FLAVORS.
