ZABAGLIONE WITH FRESH BERRIES

- 8 LARGE EGG YOLKS
- 1 CUP MARSALA WINE
- 1/3 CUP + 1 TABLESPOON SUGAR
- 1/2 TEASPOON VANILLA
- 2 PINTS MIXED FRESH BERRIES OR YOUR CHOICE
- GRATED CHOCOLATE FOR GARNISHING
Instructions
- IN A BOWL WHISK YOLKS AND A PINCH OF SALT UNTIL BEATEN LIGHTLY.
- IN A DOUBLE BOILER OVER BARELY SIMMERING WATER, WHISK TOGETHER MARSALA, SUGAR AND VANILLA WHILE HEATING AND WHISKING UNTIL SUGAR IS DISSOLVED. ADD 1/4 CUP HOT MARSALA MIXTURE TO YOLKS IN A SLOW STREAM WHILE BRISKLY WHISKING AS NOT TO ALLOW THE EGGS TO COOK FROM THE HOT LIQUID.
- POUR AND WHISK EGG MIXTURE INTO THE MARSALA MIXTURE THAT REMAINS IN THE DOUBLE BOILER, CONTINUE WHISKING UNTIL FROTHY, PALE GOLDEN AND EACH STROKE MADE WITH THE WHISK LEAVES A CLEAN PATH.
- IMMEDIATELY REMOVE PAN FROM HEAT.
- DIVIDE THE BERRIES AMONG 4 STEMMED GLASSES AND TOP WITH ZABAGLIONE. SPRINKLE WITH SHAVED CHOCOLATE.
