    List of Ingredients


    • 8 LARGE EGG YOLKS
    • 1 CUP MARSALA WINE
    • 1/3 CUP + 1 TABLESPOON SUGAR
    • 1/2 TEASPOON VANILLA
    • 2 PINTS MIXED FRESH BERRIES OR YOUR CHOICE
    • GRATED CHOCOLATE FOR GARNISHING


    Instructions


    1. IN A BOWL WHISK YOLKS AND A PINCH OF SALT UNTIL BEATEN LIGHTLY.
    2. IN A DOUBLE BOILER OVER BARELY SIMMERING WATER, WHISK TOGETHER MARSALA, SUGAR AND VANILLA WHILE HEATING AND WHISKING UNTIL SUGAR IS DISSOLVED. ADD 1/4 CUP HOT MARSALA MIXTURE TO YOLKS IN A SLOW STREAM WHILE BRISKLY WHISKING AS NOT TO ALLOW THE EGGS TO COOK FROM THE HOT LIQUID.
    3. POUR AND WHISK EGG MIXTURE INTO THE MARSALA MIXTURE THAT REMAINS IN THE DOUBLE BOILER, CONTINUE WHISKING UNTIL FROTHY, PALE GOLDEN AND EACH STROKE MADE WITH THE WHISK LEAVES A CLEAN PATH.
    4. IMMEDIATELY REMOVE PAN FROM HEAT.
    5. DIVIDE THE BERRIES AMONG 4 STEMMED GLASSES AND TOP WITH ZABAGLIONE. SPRINKLE WITH SHAVED CHOCOLATE.
