- 3 MEDIUM COOKING APPLES
- 2 RIPE MEDIUM SIZE BANANAS, PUREED OR MASHED
- 2 LARGE EGGSS
- 1 1/2 CUPS SUGAR
- 1/4 POUND SOFTENED BUTTER
- 3 CUPS FLOUR
- 1 TABLESPOON BAKING POWDER
- 2 TEASPOONS BAKING SODA
- 3/4 CUPS GOLDEN RAISINS
- 3/4 CUPS FINELY CHOPPED NUTS
Instructions
- PREHEAT OVEN TO 350°.GREAST AND FLOUR 2 LOAF PAN AND SET ASIDE.
- CUT EACH ORANGE, INCLUDING THE RIND WHITE SKIN REMOVED INTO 8 SECTIONS. REMOVE AND DISCARD SEEDS. CHOP ORANGE FINELY IN A FOOD PROCESSOR. SET ASIDE IN A 2 QUART BOWL
- REPEAT CHOPPING WITH PEELED AND CORED CUT UP APPLES. COMBINE APPLES WITH ORANGES. ADD PUREED OR MASHED BANANAS AND MIX WITH APPLE/ORANGE MIXTURE.
- BEAT EGGS IN A LARGE MIXER BOWL, ADD SUGAR GRADUALLY, BEATING UNTIL MIXTURE IS THICK AND SMOOTH. BEAT IN BUTTER AND ADD FRUITS.
- IN A 1 QUART CONTAINER, STIR THE FLOUR WITH THE BAKING POWDER AND BAKING SODA. BEAT FLOUR MIXTURE INTO FRUIT MIXTURE. STIR IN RAISINS AND WALNUTS.
- POUR BATTER INTO PREPARED LOAF PANS AND BAKE FOR 1 HOUR OR UNTIL CAKE TESTER TESTS DONE.
- LET COOL ON RACK BEFORE SLICING.
- YOU CAN MAKE A GLAZE WITH CONFECTIONERS' SUGAR AND ORANGE JUICE AND SPREAD OVER FRUITCAKES.
