- 8 OUNCE GINGERSNAP COOKIES, FINELY CRUSHEDD
- 3 TABLESPOONS MELTED BUTTER
- 2 TABLESLPOONS SUGAR
- 2 ( 8 OUNCE PACKAGES ) SOFTENED CREAM CHEESE
- 3/4 CUPS FIRMLLY PACKED LIGHT BROWN SUGAR
- 3 LARGE EGGS
- 2 TESPOONS PURE VANILLA EXTRACT
- 15 OUNCE PUMPKIN PUREE
- 1 TEASPOON PUMPKIN PIE SPICE
- WHIPPED CREAM
- PECAN HALVES
Instructions
- PREHEAT OVEN TO 325°.
- COMBINE CRUMBS, BUTTER AND SUGAR. PRESS INTO BOTTOM AND SIDES OF A 9" SPRINGFORM PAN. BAKE 15 MINUTES AND SET ASIDE.
- BEAT CREAM CHEESE AND BROWN SUGAR UNTIL SMOOTH. ADD EGGS, ONE AT A TIME BEATING WELL AFTER EACH ADITION. ADD REMAINING INGREDIENTS AND BEAT UNTIL SMOOTH.
- POUR INTO PREBAKED CRUST. BAKE FOR 50 MINUTES OR UNTIL FILLING BARELY MOVES WHEN GENTLY SHAKEN.
- COOL, THEN CHILL IN REFRIGERATOR FOR SEVERAL HOURS OR OVERNIGHT.
- WHEN READDY TO SERVE GARNISH WITH WHIPPED CREAM AND PECAN HALVES.
