    List of Ingredients


    • 8 OUNCE GINGERSNAP COOKIES, FINELY CRUSHEDD
    • 3 TABLESPOONS MELTED BUTTER
    • 2 TABLESLPOONS SUGAR
    • 2 ( 8 OUNCE PACKAGES ) SOFTENED CREAM CHEESE
    • 3/4 CUPS FIRMLLY PACKED LIGHT BROWN SUGAR
    • 3 LARGE EGGS
    • 2 TESPOONS PURE VANILLA EXTRACT
    • 15 OUNCE PUMPKIN PUREE
    • 1 TEASPOON PUMPKIN PIE SPICE
    • WHIPPED CREAM
    • PECAN HALVES


    Instructions


    1. PREHEAT OVEN TO 325°.
    2. COMBINE CRUMBS, BUTTER AND SUGAR. PRESS INTO BOTTOM AND SIDES OF A 9" SPRINGFORM PAN. BAKE 15 MINUTES AND SET ASIDE.
    3. BEAT CREAM CHEESE AND BROWN SUGAR UNTIL SMOOTH. ADD EGGS, ONE AT A TIME BEATING WELL AFTER EACH ADITION. ADD REMAINING INGREDIENTS AND BEAT UNTIL SMOOTH.
    4. POUR INTO PREBAKED CRUST. BAKE FOR 50 MINUTES OR UNTIL FILLING BARELY MOVES WHEN GENTLY SHAKEN.
    5. COOL, THEN CHILL IN REFRIGERATOR FOR SEVERAL HOURS OR OVERNIGHT.
    6. WHEN READDY TO SERVE GARNISH WITH WHIPPED CREAM AND PECAN HALVES.
    7. SERVES 12
