STEP #1. CREAM BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY. ADD EGG AND BEAT WELL. BLEND IN VANILLA EXTRACT. COMBINE FLOUR AND SALT AND ADD TO CREAMED MIXTURE.
STEP #2. DROP DOUGH BY ROUNDED TEASPOONFULS ONTO UNGREASED COOKIE SHEETS AND BAKE 10 TO 12 MINUTES OR UNTIL GOLDEN BROWN.

VARIATIONS:
CHOCOLATE CHOCOLATE MINT COOKIES:
IN STEP 1, ADD 1 TEASPOON MINT EXTRACT WITH VANILLA. ADD 1/2 CUP COCOA WITH FLOUR AND SALT. CREAM MIXTURE AND STIR IN 2/3 CUPS CHOCOLATE CHIPS. CONTINUE WITH STEP 2.
LEMON COOKIES:
IN STEP 1, SUBSTITUTE 2 TEASPOONS LEMON EXTRACT FOR VANILLA. ADD 2 TEASPOONS GROUND GINGER WITH FLOUR AND SALT. CREAM MIXTURE. IN STEP 2, ROLL DOUGH INTO 1" BALLS AND PLACE ON UNGREASED COOKIE SHEETS. FLATTEN COOKIE DOUGH WITH BOTTOM OF A GLASS INTO 2" CIRCLES. BAKE 10 TO 12 MINUTES. SPRINKLE BAKED COOKIES WITH CONFECTIONERS' SUGAR.
CRANBERRY ALMOND COOKIES:
IN STEP 1, SUBSTITUTE 1 TEASPOON ALMOND EXTRACT FOR VANILLA. STIR 1/2 CUP DRIED CRANBERRIES AND 1/2 CUP CHOPPED TOASTED ALMONDS TO CREAM FLOUR MIXTURE. PROCEED WITH STEP 2.
