    List of Ingredients


    • 2 EGGS
    • 1 CUP VEGETABLE OIL
    • 2 CUPS SUGAR
    • 1 TEASPOON VANILLA
    • 3 CUPS FLOUR
    • 1 TEASPOON BAKING SODA
    • 3 TEASPOONS SALT
    • 1/2 TEASPOON BAKING POWDER
    • 3 TEASPOONS CINNAMON
    • 1 1/2 TEASPOONS NUTMEG
    • 2 TESPOON GROUND ALLSPICE
    • 3 CUPS GRATED ZUCCHINI
    • 1 CUP CHOPPED NUTS
    • 1 CUP GOLDEN RAISINS
    • 1 CUP MIXED CANDIED FRUITS, CHOPPED
    • 1/2 CUP CURRANTS


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE 2 9 X 5" LOAF PANS.
    2. BEAT EGGS WITH OIL, STIR IN SUGAR AND VANILLA.
    3. SIFT TOGETHER FLOUR, SODA, SALT, BAKING POWDER, CINNAMON, NUTMEG AND ALLSPICE. ADD TO EGG/SUGAR MIXTURE.
    4. STIR IN ZUCCHINI, NUTS, RAISINS, CANDIED FRUIT AND CURRANTS.
    5. POUR INTO PREPARED LOAF PANS AND BAKE FOR 80 MINUTES OR UNTIL DONE. COOL IN PAN ON WIRE RACK FOR 15 MINUTES, REMOVE FROM PANS AND COOL COMPLETELY ON RACK.
    6. WHEN TOTALLY COOLED, WRAP IN FOIL AND STIRE IN AN AIRTIGHT CONTAINER.
    7. 2 LOAVES
