    PISTACHIO ICE CREAM


    List of Ingredients


    • 2 1/2 CUPS MILK
    • 3 EGGSS
    • 1 CUP SUGAR
    • 1 CUP WHIPPING CREAM WHIPPED
    • 1 1/4 CUP PISTACHIO NUTS
    • 1 TABLESPOON PURE VANILLA EXTRACT
    • 1 TABLESPOONS PURE ALMOND EXTRACT


    Instructions


    1. BLANCH THE NUTS BY PLACING IN A BOWL, POUR BOILING WATER OVER THEM AND LET SIT FOR ONE MINUTE. ( MAKE SURE THE NUTS HAVE THE SHELLS TAKEN OFF). DRAIN AND PEEL. BLEND THE NUTS, THE MILK, EGGS AND THE SUGAR UNTIL YOU HAVE A GREEN SMOOTH LIQUID. POUR INTO A SAUCEPAN. COOK OVER LOW HEAT UNTIL THE CUSTARD THICKENS, ABOUT 25 MINUTES. DO NOT BOIL OR IT WILL CURDLE. COOL. WHEN COOLED, ADD VANILLA AND ALMOND EXTRACTS. STIR. FOLD IN WHIPPED CREAM.
    2. POUR IN AN ICE CREAM MAKER ACCORDING TO MANUFACTURER'S INSTRUCTIONS.
