    • 1 TEASPOON OLIVE OIL
    • 3 GARLIC CLOVES, CRUSHEDDD
    • D3 CUPS TOMATO SAUCE
    • 1 TABLESLPOON ITALIAN SEASONING
    • 1/4 TEASPOON PEPPER
    • 1 1/2 CUPS RICOTTA CHEESE
    • 4 1/2 OUNCED GRATED MOZZARELLA CHEESE
    • 3/4 CUPS GRATED PARMESAN CHEESE
    • 1 EGG LIGHTLY BEATEN
    • 1/4 CUP FRESH CHOPPED PARSLEY
    • 12 AL DENTE COOKED MANICOTTI SHELLS


    Instructions


    1. PREHEAT OVEN TO 350°.SPRAY A 9 X 13" BAKING PAN WITH VEGETABLE COOKING SPRAY.
    2. IN A LARGE NONSTICK SKILLET, HEAT OIL, ADD GARLIC AND SAUTE OVER MEDIUM HEAT TWO MINUTES OR JUST UNTIL GOLDEN.
    3. ADD TOMATO SAUCE, ITALIAN SEASONING AND PEPPER, STIR TO MIX WELL. REDUCE HEAT TO LOW, SIMMER, COVERED STIRRING OCCASIONALLY ABOUT 15 MINUTES.
    4. IN A MEDIUM BOWL, COMBINE RICOTTA CHEESE, MOZZARELLA CHEESE, PARMESAN CHEESE, EGG AND PARSLEY.
    5. FILL MANICOTTI SHELLS WITH EQUAL AMOUNT OF CHEESE MIXTURE. ARRANGE SHELLS IN PREPARED BAKING PAN.
    6. POUR PREPARED SAUCE OVER SHELLS AND BAKE 30 TO 40 MINUTES.
    7. 6 SERVINGS
    8. LAST 10 MINUTES OF BAKING, SPRINKLE WITH SHREDDED MOZZARELLA CHEESE IF DESIRED.
