CHICKEN SALTIMBOCCA
THIS IS ANOTHER DISH WHICH I MAKE OFTEN. IT MAKES A WONDERFUL PRESENTATION NOT TO MENTION HOW DELICIOUS IT IS.
List of Ingredients
- 4 CHICKEN BREAST HALVES, SKINLESS AND BONELESS
- 4 TABLESPOONS MELTED BUTTER OR MARGARINE
- 6 THIN SLICES BOILED HAM
- 3 SLICES MOZZARELLA CHEESE, SLICED IN HALF
- 1 MEDIUM TOMATO, THINLY SLICED
- 1/2 TEASPOON DRIED CRUSHED SAGE
- 1/3 CUP BREAD CRUMBS
- 2 TABLESPOONS GRATED PARMESAN CHEESE
- 2 TABLESPOONS SNIPPED PARSLEY
Instructions
- POUND THE CHICKEN BREAST WITH A MEAT MALLET INTO A 5 X 5" PIECE.
- PLACE A HAM SLICE AND HALF OF CHEESE SLICE ON EACH BREAST HALF. TOP WITH TOMATO AND SOME SAGE.
- TUCK IN TWO SIDES AND ROLL UP IN A JELLY ROLL FASHION. PRESS TO SEAL OR USE TWO TOOTHPICKS TO SECURE.
- COMBINE THE BREAD CRUMBS, PARMESAN CHEESE AND PARSLEY. DIP THE CHICKEN ROLLS IN THE MELTED MARGARINE, THEN ROLL IN BREAD CRUMB MIXTURE.
- BAKE IN A SHALLOW PAN IN A 350° PREHEATED OVEN FOR APPROXIMATELY 45 MINUTES.
- SERVE WITH PASTA AND SAUCE WITH A SALAD AND TOASTED ITALIAN BREAD.
Final Comments
SIMPLE BUT ELEGANT AND OH, SO DELICIOUS.
