    List of Ingredients


    • 2 POUNDS PEELED POTATOES
    • 1/4 CUP SOFTENED BUTTER
    • 1/2 CUP SOUR CREAM
    • 1/2 CUP CHIVES OR GREEN ONIONS SLICED
    • SEASONED SALT AND PEPPER
    • 12 OUNCES SLICED MOZZARELLA OR 1 PACKAGE SHREDDED MOZZARELLA CHEESE
    • 3 MEDIUM TOMATOES, PEELED AND SLICED
    • 1 TEASPOON BASIL
    • 1 TEASPOON OREGANO
    • 1/2 CUP PARMESAN CHEESE
    • 1/4 CUP MELTED BUTTER


    Instructions


    1. PREHEAT OVEN TO 425°. BUTTER AND LIGHTLY FLOUR A 9 1/2" DEEP PIE PLATE.
    2. COVER THE POTATOES WITH SALTED WATER AND BOIL TILL TENDER. DRAIN AND MASH. STIR IN SOFTENED BUTTER, SOUR CREAM, CHIVES AND SEASONED SALT AND PEPPER.
    3. SPREAD MASHED POTATOES IN PIE PLATE. ARRANGE 6 OUNCES MOZZARELLA CHEESE ON MASHED POTATOES. TOP WITH TOMATOE SLICES, SPRINKLE WITH BASIL AND OREGANO. TOP WITH REMAINING MOZZARELLA CHEESE. SPRINKLE WITH PAARMESAN CHEESE AND MELTED BUTTER.
    4. BAKE FOR 25 TO 30 MINUTES OR UNTIL CHEESE IS MELTED
