    MAMA MIA MANICOTTI FROM SCRATCH

    THIS IS A WONDERFUL RECIPE. INSTEAD OF BUYING THE MANICOTTI, YOU MAKE THEM FROM SCRATCH.


    List of Ingredients


    • PASTA INGREDIENTS:
    • 3 CUPS FLOUR
    • 12 LARGE EGGS
    • 3 CUPS WATER
    • SALT TO TASTE
    • ********************************************************************************
    • FILLING:
    • 3 LBS RICOTTA
    • 1 LB SHREDDED MOZZARELLA
    • 1/2 CUP GRATED ROMANO
    • 3 LARGE EGGS
    • 1/4 CUP CURLEY FRESH PARSLEY
    • 2 TEASPOONS PEPPER


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. IN A LARGE BOWL, MIX ALL OF THE FILLING INGREDIENTS BY HAND UNTIL WELL BLENDED. PLACE IN REFRIGERATOR UNTIL READY TO USE.
    3. IN A MIXER BOWL WITH BEATERS COMBINE THE FLOUR, WATER, EGGS AND SALT, BEATING UNTIL SMOOTH AND COMPLETELY BLENDED. ( THERE SHOULD BE NO LUMPS AND THE BATTER IS THIN IN CONSISTENCY. REMEMBER THE THINER THE BATTER THE BETTER THE CREPES ). LET SIT FOR 15 TO 30 MINUTES
    4. HEAT A 7" NON-STICK FRY OR CREPE PAN. LIGHTLY SPRAY WITH VEGETABLE SPRAY.
    5. POUR A SMALL AMOUNT OF BATTER INTO PAN, COATING BOTTOM OF PAN EVENLY WITH BATTER, THE TOP SHOULD LOOK SLIGHTLY DRY AND THE SIDES BEGIN TO PULL AWAY FROM THE PAN, TURN THE CREPE OVER AND COOK FOR A FEW SECONDS. REMOVE TO A PLATE. FINISH WITH REMAINING BATTER UNTIL ALL USED UP.
    6. TAKE ONE CREPE AND PLACE 2 HEAPING TABLESPOOONS OF FILLING TOWARDS EDGES OF ONE SIDE OF CREPE, TRYING NOT TO SPREAD THE FILLING TO OTHER SIDES OF EDGES AND ROLL UP. ( DO NOT ALLOW FILLING TO COME OUT OF THE ENDS. FINISH FILLING REMAINDER OF CREPES.
    7. COVER THE BOTTOM OF A 9 X 13" BAKING PAN OR CASSEROLE DISH WITH YOUR FAVORITE SAUCE. PLACE FILLED MANICOTTI IN A SINGLE LAYER.
    8. COVER WITH SAUCE AND GRATED CHEESE AND BAKE FOR 35 TO 40 MINUTES. IF YOU HAVE TO, COVER WITH ALUMINUM FOIL IF BROWNING TOO QUICKLY.
    9. 12 TO 15 SERVINGS.
