    List of Ingredients


    • 4 CUPS, 1/2 LB DRIED APRICOTS
    • 4 CUPS BOILING WATER
    • 7 CUPS SUGAR
    • 3 TABLESPOONS LEMON JUICE
    • 6 OUNCES, 1 BOTTLE LIQUID PECTIN
    • 1/4 CUP PACKED SLIVERED, BLANCHED ALMONDS


    Instructions


    1. WASH DRIED APRICOTS, DRAIN AND PUT THROUGH FOOD PROCESSOR.
    2. POUR 4 CUPS BOILING WATER OVER APRICOTS AND LET STAND 48 HOURS.
    3. SIMMER 30 MINUTES OR UNTIL MIXTURE MEASURES 4 CUPS, ADD SUGAR, SLIVERED ALMONDS AND LEMON JUICE. BRING TO FULL BOIL AND BOIL RAPIDLY FOR 1 MINUTE.
    4. REMOVE FROM HEAT, ADD LIQUID PECTIN AND STIR TO COMBINE.
    5. SKIM QUICKLY AND POUR INTO HOT STERILIZED JARS, SEAL.
    6. JAM IS SLOW IN SETTING BUT BECOMES QUITE FIRM IN A WEEK OR TWO.
    7. 7 ( 8 OUNCE) JARS
