    STRAWBERRY BANANA JAM


    List of Ingredients


    • 2 QUARTS FULLY RIPE STRAWBERRIES
    • 3 RIPE MEDIUM BANANAS
    • 3 TABLESPOONS FRESH LEMON JUICE
    • 6 3/4 CUPS SUGAR
    • 1 BOX FRUIT PECTIN
    • 1/2 TEASPOON BUTTER, SWEET


    Instructions


    1. STEM AND THOROUGHLY CRUSH STRAWBERRIES, ONE LAYER AT A TIME.
    2. MEASURE 3 1/4 CUPS AND PLACE INTO A 6 OR 8 QUART SAUCEPOT.
    3. MASH BANANAS THOROUGHLY. MEASURE 1 1/2 CUPS AND ADD TO SAUCEPAN. STIR IN LEMON JUICE.
    4. MEASURE SUGAR INTO SEPERATE BOWL.
    5. STIR PECTIN INTO FRUIT IN SAUCEPAN. ADD BUTTER. BRING TO FULL ROLLING BOIL ON HIGH HEAT, STIRRING CONSTANTLY.
    6. QUICKLY, STIR IN SUGAR. RETURN TO FULL ROLLING BOIL AND BOIL 1 MINUTE, STIRRING CONSTANTLY.
    7. REMOVE FROM KHEAT. SKIM OFF ANY FOAM WITH A SPOON.
    8. LADLE QUICKLY INTO HOT STERILE CANNING JARS, FILLING TO WITHIN 1/4" FROM THE TOPS. WIPE JAR RIMS AND THREADS. COVER WITH PRETREATED LIDS AND SCREWBANDS. PLACE ON A RACK IN A CANNER FILLED WITH BOILING WATER. BOILING WATER SHOULD COVER THE JARS BY 1 TO 2". COVER THE CANNER. BEGIN TIMING AS SOON AS ALL THE JARS ARE IN THE CANNER AND TIME FOR 5 MINUTES. REMOVE JARS.
    9. AFTER JARS HAVE COOLED, CHECK THE SEALS.
    10. 8 ( 1 CUP ) JARS
