    LOW-FAT MEATBALLS


    List of Ingredients


    • 3 SLICES OF DAY OLD WHITE BREAD, DICED
    • 1 LB. LEAN GROUND BEEF
    • 1 LB. LEAN GROUND TURKEY
    • 2 LARGE EGG WHITES
    • 1/3 CUP GRATED ROMANO OR PARMESAN CHEESE
    • 3 TABLESPOONS FINELY DICED ONION
    • 2 GARLIC CLOVES FINELY MINCED, OR 1 CLOVE( TO YOUR TASTE)
    • 1 TEASPOON SALT
    • 2 TABLESPOONS FRESH MINCED PARSLEY
    • 1/4 TEASPOON COARSELY GROUND BLACK PEPPER
    • FLAVORED BREAD CRUMBS FOR ROLLING MEATBALLS


    Instructions


    1. PREHEAT OVEN TO 425°. LINE A 15 1/2 BY 10 1/2" BAKING PAN WITH FOIL. SPRAY FOIL WITH A VEGETABLE SPRAY. SET ASIDE

    2. IN A LARGE BOWL, COMBINE DICED BREAD AND 1/3 CUP WATER. WITH HANDS, MIX UNTIL BREAD IS EVENLY MOISTENED. ADD GROUND BEEF , GROUND TURKEY, EGG WHITES, CHEESE, ONION, PARSLEY, SALT, PEPPER AND GARLIC MIXING WELL WITH HANDS.

    3. SHAPE MEAT MIXTURE INTO 24, 2 " MEATBALLS. ( FOR EASY SHAPING, WET HANDS). ROLL MEATBALLS IN FLAVORED BREAD CRUMBS.

    4. PLACE MEATBALLS IN PAN AND BAKE 15 TO 20 MINUTES, OR UNTIL COOKED THROUGH AND LIGHTLY BROWNED.

    5. NOTES: YOU CAN SHAPE THE MEAT MIXTURE INTO A RECTANGLE AND THEN CUT INTO 24 EQUAL PIECES BEFOE ROLLING.

    6. MEATBALLS CAN BE FROZEN FOR FUTURE USE. TO USE FROZEN MEATBALLS, THAW MEATABALLS IN REFRIGERATOR OVENIGHT.
