    List of Ingredients


    • 2/3 CUPS ITALIAN SEASONED BREADCRUMBS
    • 2/3 CUPS GRATED PARMESAN CHEESE
    • 1 TEASPOON PAPRIKA
    • 1/2 TEASPOON PEPPER
    • 2 TURKEY TENDERLOINS ABOUT 1 1/2 POUNDS
    • VEGETABLE COOKING SPRAY
    • 1/4 CUP OLIVE OIL
    • LEMON WEDGES
    • 1 TABLESPOON BUTTER


    Instructions


    1. COMBINE THE FIRST 4 INGREDIENTS MIXING WELL. SET ASIDE.
    2. CUT TENDERLOINS INTO 1" THICK SLICES. PLACE BETWEEN 2 SHEETS OF PLASTIC WRAP AND FLATTEN TO 1/4" THICK WITH A MALLET.
    3. COAT BOTH SIDES OF TURKEY WITH COOKING SPRAY AND DREDGE IN BREADCRUMB MIXTURE COATING BOTH SIDES WELL.
    4. COOK TURKEY SLICES IN 1 TABLESPOON BUTTER AND 2 TABLESPOONS HOT OLIVE OIL IN A LARGE SKILLET OVER MEDIUM/HIGH HEAT 1 MINUTE ON EACH SIDE OR UTNIL DONE. REPEAT WITH REMAINING PIECES. SERVE WITH LEMON WEDGES.
