- 2/3 CUPS ITALIAN SEASONED BREADCRUMBS
- 2/3 CUPS GRATED PARMESAN CHEESE
- 1 TEASPOON PAPRIKA
- 1/2 TEASPOON PEPPER
- 2 TURKEY TENDERLOINS ABOUT 1 1/2 POUNDS
- VEGETABLE COOKING SPRAY
- 1/4 CUP OLIVE OIL
- LEMON WEDGES
- 1 TABLESPOON BUTTER
Instructions
- COMBINE THE FIRST 4 INGREDIENTS MIXING WELL. SET ASIDE.
- CUT TENDERLOINS INTO 1" THICK SLICES. PLACE BETWEEN 2 SHEETS OF PLASTIC WRAP AND FLATTEN TO 1/4" THICK WITH A MALLET.
- COAT BOTH SIDES OF TURKEY WITH COOKING SPRAY AND DREDGE IN BREADCRUMB MIXTURE COATING BOTH SIDES WELL.
- COOK TURKEY SLICES IN 1 TABLESPOON BUTTER AND 2 TABLESPOONS HOT OLIVE OIL IN A LARGE SKILLET OVER MEDIUM/HIGH HEAT 1 MINUTE ON EACH SIDE OR UTNIL DONE. REPEAT WITH REMAINING PIECES. SERVE WITH LEMON WEDGES.
