    • 2 CUPS SUGAR
    • 2 TEASPOON POWDERED VANILLA
    • 1/2 CUP CHOPPED PECANS
    • 3 CUPS FLOUR
    • 2 TEASPOONS BAKING SODA
    • 1 TABLSPOON CINNAMON
    • 1/4 TEASPOON NUTMEG


    Instructions


    1. COMBINE ALL OF THE INGREDIENTS. POUR INTO AN AIRTIGHT CONTAINER OR JAR.
    2. GIFT TAG:

      CARROT CAKE
      MAKES ONE 13 X 9" CAKE


      1 PACKAGE CARROT CAKE MIX
      1 1/2 CUPS VEGETABLE OIL
      3 LARGE EGGS
      3 CUPS GRATED CARROTS
      8 OUNCE CAN CRUSHED PINEAPPLE


      PREHEAT OVEN TO 350°. GREASE A 13 X 9" BAKING PAN.
      PLACE CARROT CAKE MIX IN A LARGE MIXING BOWL. MAKE A WELL IN THE CENTER OF THE MIX, ADD THE OIL, EGGS, CARROTS AND PINEAPPLE. MIX WITH A WIRE WHISK UNTIL SMOOTH. POUR INTO PREPARED PAN AND BAKE FOR 40 TO 50 MINUTES OR UNTIL A CAKE TESTER INSERTED INTO CENTER COMES OUT CLEAN. COOL CAKE AND FROST WITH CREAM CHEESE FROSTING OR DUST WITH CONFECTIONERS' SUGAR.
