HEARTY CHILI CON CARNE

- 1 TEASPOON VEGETABLE OIL
- 1 MEDIUM ONION CHOPPED
- /2 MEDIUM CARROT DICED
- 1 GARLIC CLOVE MINCED
- 8 OUNCES GROUND BEEF
- 1 1/4 TABLESPOONS MILK OR HOT CHILI POWDER
- 1 TEASPOON GROUND CUMIN
- 1 CUP CANNED WHOLE ITALIAN TOMATOES COARSELY CHOPPED
- 1/2 TEASPOON DRIED OREGANO
- 1 DASH GROUND CLOVES
- 1 DASH GROUND RED PEPPER
- 2 OUNCES CANNED BLACK BEANS, RINSED AND DRAINED
Instructions
- IN A LARGE NONSTICK SAUCEPAN, HEAT OIL, ADD ONIONS AND CARROTS. COOK OVER MEDIUM HEAT, STIRRING FREQUENTLY, 3 TO 5 MINUTES OR UNTIL ONIONS ARE SOFTENED. ADD GARLIC, STIRRING FREQUENTLY FOR ABOUT 5 MINUTES OR UNTIL ONIONS ARE GOLDEN BROWN.
- ADD BEEF, CHILI POWDER AND CUMIN TO ONION MIXTURE. COOK GROUND BEEF STIRRING TO BREAK UP ABOUT 4 TO 5 MINUTES OR UNTIL NO LONGER PINK.
- ADD TOMATOES WITH JUICE, OREGANO, CLOVES AND PEPPER, BRING MIXTURE TO A BOIL.
- REDUCE HEAT TO LOW, SIMMER 18 TO 20 MINUTES OR UNTIL MIXTURE IS THICKENED. STIR IN BEANS, SIMMER 2 TO 3 MINUTES OR UNTIL BEANS ARE HEATED.
- DIVIDE EVENLY AMONG PLATES.
