LONDON BROIL
List of Ingredients
- 1/4 CUP PLAIN NONFAT YOGURT
- 2 TABLESPOONS DIJON MUSTARD
- 2 TABLESPOONS APPLE JUICE
- 1 TABLESPOON OLIVE OIL
- 1 TABLESPOON LIGHT BROWN SUGAR
- 1/2 TEASPOON CRUSHED GARLIC
- 1/2 TEASPOON ONION POWDER
- 1 PIECE, 1/2 POUND LONDON BROIL
- 1/3 CUP BOTTLED ROASTED RED PEPPERS
- 2 TEASPOONS LOW FAT MAYONNAISE
- PINCH EACH SALT AND BLACK PEPPER
- 1 BAKED POTATO
- 1 TEASPOON CHOPPED FRESH PARSLEY, FLAT LEAF
Instructions
- PREHET BROILER.
- MIX YOGURT, MUSTARD, APPLE JUICE, OIL, SUGAR, GARLIC AND ONION POWDER IN BOWL. RESERVE HALF OF THE MIXTURE, 1/4 CUP TO SERVE WITH BAKED POTATO.
- ADD BEEF TO REMAINING HALF OF YOGURT MIXTURE. STIR TO COAT. REFRIGERATE 15 MINUTES.
- MEANWHILE, PREPARE RED PEPPER SAUCE: PROCESS ROASTED RED PEPPERS, MAYONNAISE, SALT AND PEPPER IN A FOOD PROCESSOR OR UNTIL BLENDED SMOOTH. REMOVE TO BOWL.
- REMOVE MEAT FROM MARINADE, DISCARD MARINADE.
- BROIL MEAT 6 INCHES FROM HEAT 10 TO 12 MINUTES, TURNING OVER HALFWAY THROUGH, OR UNTIL INTERNAL TEMPERATURE REGISTERS AT LEST 145°.
- ACCOMPANY EACH SERVING WITH BAKED POTATO, THE RESERVED YOGURT MIXTURE, RED PEPPER SAUCE AND CHOPPED FRESH PARSLEY.
