    List of Ingredients


    • 1/2 CUP SUGAR
    • 1/4 CUP SOFTENED BUTTER
    • 1 EGG
    • 2 1/3 CUPS FLOUR
    • 4 TEASPOONS BAKING POWDER
    • 1/2 TEASPOON SALT
    • 1 CUP MILK
    • 1 TEASPOON VANILLA EXTRACT
    • GRATED ZEST OF ONE LEMON
    • 1 1/2 CUPS FRESH OR FROZEN BLUEBERRIES OR IF YOU LIKE RASPBERRIES
    • ******************************************************************************
    • TOPPING:
    • 1/3 CUP SUGAR
    • 1/4 CUP FLOUR
    • 2 TABLESPOONS BUTTER OR MARGARINE


    Instructions


    1. PREHEAT OVEN TO 375°. GREASE A 12 CUP MUFFIN PAN OR LINED WITH PAPER CUPS. SET ASIDE.
    2. IN A MIXING BOWL, CREAM SUGAR AND BUTTER. ADD EGG AND MIX WELL.
    3. COMBINE FLOUR, BAKING POWDER AND SALT, STIR INTO THE CREAMED MIXTURE ALTERNATELY WITH MILK. "DO NOT OVER MIX".
    4. GENTLY FOLD IN VANILLA, LEMON ZEST AND BLUEBERRIES ( IF BLUEBERRIES ARE FROZEN, YOU DON'T NEED TO THAW).
    5. FILL THE MUFFIN CUPS 2/3 FULL.
    6. IN A SMALL BOWL, COMBINE SUGAR, AND FLOUR, CUT IN BUTTER UNTIL CRUMBLY. SPRINKLE OVER MUFFINS.
    7. BAKE FOR 25 MINUTES OR UNTIL GOLDEN BROWN AND TESTER COMES OUT CLEAN.
    8. 12 MUFFINS
