BLUEBERRY STREUSEL MUFFINS

- 1/2 CUP SUGAR
- 1/4 CUP SOFTENED BUTTER
- 1 EGG
- 2 1/3 CUPS FLOUR
- 4 TEASPOONS BAKING POWDER
- 1/2 TEASPOON SALT
- 1 CUP MILK
- 1 TEASPOON VANILLA EXTRACT
- GRATED ZEST OF ONE LEMON
- 1 1/2 CUPS FRESH OR FROZEN BLUEBERRIES OR IF YOU LIKE RASPBERRIES

- TOPPING:
- 1/3 CUP SUGAR
- 1/4 CUP FLOUR
- 2 TABLESPOONS BUTTER OR MARGARINE
Instructions
- PREHEAT OVEN TO 375°. GREASE A 12 CUP MUFFIN PAN OR LINED WITH PAPER CUPS. SET ASIDE.
- IN A MIXING BOWL, CREAM SUGAR AND BUTTER. ADD EGG AND MIX WELL.
- COMBINE FLOUR, BAKING POWDER AND SALT, STIR INTO THE CREAMED MIXTURE ALTERNATELY WITH MILK. "DO NOT OVER MIX".
- GENTLY FOLD IN VANILLA, LEMON ZEST AND BLUEBERRIES ( IF BLUEBERRIES ARE FROZEN, YOU DON'T NEED TO THAW).
- FILL THE MUFFIN CUPS 2/3 FULL.
- IN A SMALL BOWL, COMBINE SUGAR, AND FLOUR, CUT IN BUTTER UNTIL CRUMBLY. SPRINKLE OVER MUFFINS.
- BAKE FOR 25 MINUTES OR UNTIL GOLDEN BROWN AND TESTER COMES OUT CLEAN.
