CHOCOLATE CHEESECAKE MUFFINS

- 4 OUNCE PACKAGE CREAM CHEESE, SOFTENEDD
- 3 TABLESPOONS SUGAR
- 1 CUP FLOUR
- 1/2 CUP SUGAR
- 3 TABLESPOONS UNSWEETENED COCOA POWDER
- 2 TEASPOONS BAKING POWDER
- 1/2 TESPOON SALT
- 1 BEATEN EGG
- 3/4 CUPS MILK
- 1/3 CUP OIL
- 1 CUP MINI SEMI SWEET CHOCOLATE CHIPS
- CONFECTIONERS' SUGAR
Instructions
- PREHEAT OVEN TO 375°.GREASE MUFFIN CUPS.
- IN A SMALL BOWL, BEAT CREAM CHEESE AND 2 TABLESPOOONS SUGAR UNTIL LIGHT AND FLUFFY. SET ASIDE.
- IN A LARGE BOWL, STIR TOGETHER FLOUR, 1/2 CUP SUGAR, COCOA POWDER, BAKING POWDER AND SALT. MAKE A WELL IN CENTER OF DRY INGREDIENTS.
- COMBINE EGG, MILK AND OIL. ADD ALL AT ONCE TO DRY INGREDIENTS, WITH A WOODEN SPOON STIR JUST UNTIL ALL DRY INGREDIENTS ARE MOISTENED. ( BATTER WILL BE SLIGHTLY LUMPY). STIR IN MINI CHIPS.
- SPOON ABOUT 2 TABLELSPOONS CHOCOLATE BATTER INTO EACH GREASED MUFFIN CUP. DROP 1 TEASPOON CREAM CHEESE MIXTURE ON TOP AND ADD MORE BATTER.
- BAKE FOR 20 MINUTES OR UNTIL TESTER INSERTED IN CENTER COMES OUT CLEAN. LET COOL ON WIRE RACK. DUST WITH POWDERED SUGAR.
