CHOCOLATE STREUSEL PECAN MUFFINS

- 1/4 CUP FLOUR
- 1/4 CUP PACKED BROWN SUGAR
- 1/4 TEASPOON GROUND CINNAMON
- 2 TABLESPOONS MELTED BUTTER
- 1/4 CUP CHOPPED PECANS

- 2 CUPS SEMI SWEET CHOCOLATE CHIPS, DIVIDED
- 1/3 CUP MILK
- 3 TABLESLPOONS BUTTER
- 1 CUP FLOUR
- 2 TABLESLPOONS SUGAR
- 2 TEASPOONS BAKING POWDER
- 1/4 TEASPOON GROUND CINNAMON
- 3/4 CUPS CHOPPED PECANS
- 1 EGG
- 1/2 TEASPOON VANILLA
Instructions
- IN A BOWL, COMBINE FLOUR, BROWN SUGAR, CINNAMON AND BUTTER WITH A FORK OR WITH YOUR FINGERS UNTIL MIXTURE RESEMBLES COARSE CRUMBS, STIR IN PECANS. SET ASIDE.
- PREHEAT OVEN TO 375°. GREASE OR PAPER LINE 12 MUFFIN CUPS. SET ASIDE.
- COMBINE 1 CUP CHOCOLATE CHIPS, MILK AND BUTTER OVER HOT BUT NOT BOILING WATER IN A DOUBLE BOILER. STIR UNTIL CHOCOLATE IS MELTER AND MIXTURE IS SMOOTH.
- COMBINE FLOUR , SUGAR, BAKING POWDER, CINNAMON, PECANS AND REMAINING CHOCOLATE CHIPS IN A LARGE BOWL. STIR INTO FLOUR MIXTURE JUST UNTIL MOISTENED.
- SPOON IN MUFFIN CUPS, 2/3 FULL. SPRINKLE WITH TOPPING.
- BAKE FOR 2O TO 25 MINUTES, OR UNTIL TESTER COMES OUT CLEAN. COOL IN PAN FOR 5 MINUTES, REMOVE TO A WIRE RACK AND ALLOW TO COOL COMPLETELY.
