DUTCH APPLE MUFFIN

- 2 MEDIUM APPLES, PEELED, CORED AND COARSELY CHOPPED
- 1 TABLESPOON SUGAR
- 1/2 TEASPOON GROUND CINNAMON

- TOPPING:
- 2/3 CUP FLOUR
- 1/4 CUP PACKED BROWN SUGAR
- 1/4 CUP BUTTER OR MARGARINE
- 1/2 TEASPOON GROUND CINNAMON

- BATTER:
- 1 CUP SUGAR
- 3/4 CUP VEGETABLE OIL
- 1 LARGE EGG
- 1 1/2 TEASPOON VANILLA
- 1 1/2 CUPS FLOUR
- 3/4 TEASPOON BAKING SODA
- 3/4 TEASPOON GROUND CINNAMON
- 1/4 TEASPOON SALT
Instructions
- PREHEAT OVEN TO 325°. SPRAY 12 REGULAR SIZE MUFFIN CUPS WITH NON STICK COOKING SPRAY OR LINE WITH PAPER LINERS.
- IN A SMALL BOWL, MIX APPLES, SUGAR AND CINNAMON. SET ASIDE.
- STIR TOPPING INGREDIENTS IN A SMALL BOWL WITH A FORK OR PASTRY BLENDER UNTIL CRUMBS FORM. SET ASIDE.
- IN A MIXING BOWL, BEAT SUGAR INTO OIL WITH AN ELECTRIC MIXER ON HIGH SPEED. REDUCE SPEED TO MEDIUM AND BEAT IN EGG AND VANILLA. REDUCE SPEED TO LOW AND ADD FLOUR, BAKING SODA, CINNAMON AND SALT. BEAT UNTIL BLENDED. BATTER WILL BE THICK AND GOOEY. MIX IN APPLES.
- SPOON BATTER INTO MUFFIN CUPS. EVENLY SCATTER CRUMB TOPPING. BAKE 25 TO 30 MINUTES OR UNTIL TESTER INSERTED INTO CENTER COMES OUT CLEAN.
- REMOVE FROM OVEN AND COOL ON A WIRE RACK FOR 10 MINUTES. REMOVE FROM CUPS AND COMPLETELY COOL.
