LEMON TEA MUFFINS

- 1 CUP FLOUR
- 1 TEASPOON BAKING POWDER
- 1/4 TEASPOON SALT
- 1/2 CUP BUTTER OR MARGARINE
- 1/2 CUP SUGAR
- 2 EGGS, SEPARATED
- 3 TABLESPOONS LEMON JUICE
- 1 TEEASPOON LEMON PEEL, GRATED
- 2 TABALESPOONS SUGAR
- 1/4 TEASPOON CINNAMON
Instructions
- PREHEAT OVEN TO 375°. GREASE 18 MUFFIN CUPS AND SET ASIDE.
- SOFT TOGETHER FLOUR, BAKING POWDER, AND SALT.
- CREAM BUTTER AND 1/2 CUP SUGAR.
- BEAT EGG YOLKS UNTIL THICK AND LEMON IN COLOR, BLEND WELL WITH CREAMED MIXTURE.
- ADD FLOUR MIXTURE ALTERNATELY WITH LEMON JUICE.
- BEAT EGG WHITES UNTIL STIFF. CAREFULLY FOLD EGG WHITES AND LEMON PEEL INTO BATTER.
- FILL PREPARED MUFFIN CUPS 2/3 FULL.
- COMBINE 2 TABLESPOONS SUGAR AND CINNAMON, SPRINKLE ABOUT 1/2 TEASPOON OVER EACH MUFFIN.
- BAKE FOR 15 TO 20 MINUTES OR UNTIL THEY TEST DONE.
- 18 SMALL MUFFINS
