    List of Ingredients


    • 1 CUP FLOUR
    • 1 TEASPOON BAKING POWDER
    • 1/4 TEASPOON SALT
    • 1/2 CUP BUTTER OR MARGARINE
    • 1/2 CUP SUGAR
    • 2 EGGS, SEPARATED
    • 3 TABLESPOONS LEMON JUICE
    • 1 TEEASPOON LEMON PEEL, GRATED
    • 2 TABALESPOONS SUGAR
    • 1/4 TEASPOON CINNAMON


    Instructions


    1. PREHEAT OVEN TO 375°. GREASE 18 MUFFIN CUPS AND SET ASIDE.
    2. SOFT TOGETHER FLOUR, BAKING POWDER, AND SALT.
    3. CREAM BUTTER AND 1/2 CUP SUGAR.
    4. BEAT EGG YOLKS UNTIL THICK AND LEMON IN COLOR, BLEND WELL WITH CREAMED MIXTURE.
    5. ADD FLOUR MIXTURE ALTERNATELY WITH LEMON JUICE.
    6. BEAT EGG WHITES UNTIL STIFF. CAREFULLY FOLD EGG WHITES AND LEMON PEEL INTO BATTER.
    7. FILL PREPARED MUFFIN CUPS 2/3 FULL.
    8. COMBINE 2 TABLESPOONS SUGAR AND CINNAMON, SPRINKLE ABOUT 1/2 TEASPOON OVER EACH MUFFIN.
    9. BAKE FOR 15 TO 20 MINUTES OR UNTIL THEY TEST DONE.
    10. 18 SMALL MUFFINS
