    • 3/4 CUPS BUTTER OR MARGARINE
    • 2 LARGE EGGS
    • 1 TEASPOON VANILLA EXTRACT
    • 1/2 TEASPOON CINNAMON
    • 2 1/4 CUPS UNBLEACHED FLOUR
    • 1 TABLESPOON ORANGE RIND, GRATED
    • 1/2 CUP SUGAR
    • 1 TABLESPOON RUM
    • 3 TABLESPOONS MILK
    • 2 TEASPOONS BAKING POWDER
    • 1/4 CUP GROUND ALMONDS
    • 1/4 CUP RAISINS, OPTIONAL


    Instructions


    1. PREHEAT OVEN TO 375°.GREASE 18 MUFFIN TINS AND SET ASIDE.
    2. CREAM BUTTER AND SUGAR. BEAT IN EGGS, RUM, VANILLA, AND MILK.
    3. MIX CINNAMON, BAKING POWDER, AND FLOUR. ADD FLOUR MIXTURE INTO BUTTER MIXTURE. GENTLY MIX IN ALMONDS, ORANGE RIND AND RAISINS.
    4. POUR BATTER INTO PREPARED MUFFIN TINS AND BAKE FOR 25 TO 30 MINUTES OR UNTIL LIGHTLY BROWNED AND TESTER COMES OUT CLEAN.
    5. 18 SMALL MUFFINS
