List of Ingredients
- 1 CAN ( 19 OUNCE) CRUSHED PINEAPPLE
- 1 CUP SOUR CREAM
- 1/2 CUP SUGAR
- 1 EGG
- 1/4 CUP BUTTER OR MARGARINE
- 2 TEASPOONS RUM EXTRACT
- 1 1/2 CUPS FLOUR
- 1 TEASPOON BAKING POWDER
- 1/2 TEASPOON BAKING SODA
- 1/2 TEASPOON SALT
- 1/2 CUP COCONUT
- 12 MARASCHINO CHERRIES CHOPPED
Instructions
- PREHEAT OVEN TO 375°. LIGHTLY GREASE OR PAPER LINE 12 LARGE MUFFIN TINS. SET ASIDE.
- DRAIN PINEAPPLE THOROUGHLY.
- IN A LARGE MIXER BOWL, BEAT TOGETHER SOUR CREAM, SUGAR, EGG, BUTTER AND RUM EXTRACT.
- COMBINE FLOUR, BAKING POWDER, BAKING SODA AND SALT. STIR INTO SOUR CREAM MIXTURE, FOLD IN COCONUT, CRUSHED PINEAPPLE AND CHERRIES. MIXING WELL.
- SPOON BATTER INTO PREPARED MUFFIN TINS. BAKE FOR 25 MINUTES OR UNTIL TOP SPRINGS BACK.
- 12 LARGE MUFFINS
