    List of Ingredients


    • 1 CAN ( 19 OUNCE) CRUSHED PINEAPPLE
    • 1 CUP SOUR CREAM
    • 1/2 CUP SUGAR
    • 1 EGG
    • 1/4 CUP BUTTER OR MARGARINE
    • 2 TEASPOONS RUM EXTRACT
    • 1 1/2 CUPS FLOUR
    • 1 TEASPOON BAKING POWDER
    • 1/2 TEASPOON BAKING SODA
    • 1/2 TEASPOON SALT
    • 1/2 CUP COCONUT
    • 12 MARASCHINO CHERRIES CHOPPED


    Instructions


    1. PREHEAT OVEN TO 375°. LIGHTLY GREASE OR PAPER LINE 12 LARGE MUFFIN TINS. SET ASIDE.
    2. DRAIN PINEAPPLE THOROUGHLY.
    3. IN A LARGE MIXER BOWL, BEAT TOGETHER SOUR CREAM, SUGAR, EGG, BUTTER AND RUM EXTRACT.
    4. COMBINE FLOUR, BAKING POWDER, BAKING SODA AND SALT. STIR INTO SOUR CREAM MIXTURE, FOLD IN COCONUT, CRUSHED PINEAPPLE AND CHERRIES. MIXING WELL.
    5. SPOON BATTER INTO PREPARED MUFFIN TINS. BAKE FOR 25 MINUTES OR UNTIL TOP SPRINGS BACK.
    6. 12 LARGE MUFFINS
