    PUMPKIN APPLE STRUSSEL MUFFINS

    THESE ARE JUST WONDERFUL TASTING MOIST MUFFING. I MAKE THIS EVERY YEAR FOR THANKSGIVING AND CHRISTMAS FOR GIVING.


    List of Ingredients


    • 1 TABLESPOON PUMPKIN SICES
    • 2 1/2 CUPS FLOUR
    • 2 CUPS SUGAR
    • 1 TEASPOON SALT
    • 1 TEASPOON BAKING SODA
    • 2 LIGHTLY BEATAEN EGGS
    • 1 CUP PUMPKIN PUREE
    • 1/2 CUP VEGETABLE OIL
    • 2 CUPS FINELY CHOPPED APPLES
    • *******************************************************************************************************
    • TOPPING:
    • 2 TABLESLPOONS FLOUR
    • 1/4 CUP SUGAR
    • 1/2 TEASPOON CINNAMON
    • 4 TABLESPOONS BUTTER


    Instructions


    1. PREHEAT OVEN TO 350° LIGHTLY SPRAY JUMBO MUFFIN PANS.

    2. IN A LARGE BOWL, COMBINE FLOUR, SUGAR, SALT, PUMPKIN SPICES AND BAKING SODA, MIXING WELL TO COMBINE. SET ASIDE

    3. COMBINE EGGS, PUMPKIN PURE AND OIL STIRRING WELL TO BLEND. ADD TO DRY INGREDIENTS, STIRRING WITH A WOODEN SPOON JUST UNTIL MOISTENED. STIR IN APPLES AND MIX WELL.

    4. POUR INTO PREPARED MUFFIN PANS AND SPRINKLE WITH STRUSSEL TOPPING.

    5. BAKE IN OVEN FOR 25 TO 35 MINUTES OR UNTIL TESTER COMES OUT CLEAN.

    6. TOPPING: COMBINE FLOUR, SUGAR, CINNAMON AND BUTTER UNTIL WELL COMBINED AND HOLDS TOGETHER.
