PUMPKIN APPLE STRUSSEL MUFFINS

THESE ARE JUST WONDERFUL TASTING MOIST MUFFING. I MAKE THIS EVERY YEAR FOR THANKSGIVING AND CHRISTMAS FOR GIVING.
List of Ingredients
- 1 TABLESPOON PUMPKIN SICES
- 2 1/2 CUPS FLOUR
- 2 CUPS SUGAR
- 1 TEASPOON SALT
- 1 TEASPOON BAKING SODA
- 2 LIGHTLY BEATAEN EGGS
- 1 CUP PUMPKIN PUREE
- 1/2 CUP VEGETABLE OIL
- 2 CUPS FINELY CHOPPED APPLES

- TOPPING:
- 2 TABLESLPOONS FLOUR
- 1/4 CUP SUGAR
- 1/2 TEASPOON CINNAMON
- 4 TABLESPOONS BUTTER
Instructions
- PREHEAT OVEN TO 350° LIGHTLY SPRAY JUMBO MUFFIN PANS.
- IN A LARGE BOWL, COMBINE FLOUR, SUGAR, SALT, PUMPKIN SPICES AND BAKING SODA, MIXING WELL TO COMBINE. SET ASIDE
- COMBINE EGGS, PUMPKIN PURE AND OIL STIRRING WELL TO BLEND. ADD TO DRY INGREDIENTS, STIRRING WITH A WOODEN SPOON JUST UNTIL MOISTENED. STIR IN APPLES AND MIX WELL.
- POUR INTO PREPARED MUFFIN PANS AND SPRINKLE WITH STRUSSEL TOPPING.
- BAKE IN OVEN FOR 25 TO 35 MINUTES OR UNTIL TESTER COMES OUT CLEAN.
- TOPPING: COMBINE FLOUR, SUGAR, CINNAMON AND BUTTER UNTIL WELL COMBINED AND HOLDS TOGETHER.
