RASPBERRY BANANA MUFFINS
List of Ingredients
- 1 1/4 CUPS SUGAR
- 1/2 CUP UNSWEETENED APPLESAUCE
- 1/4 CUP LOW FAT BUTTERMILK*****
- 2 EGGS
- 1 TEASPOON VANILLA
- 2 LARGE RIPE MASHED BANANAS
- 2 CUP WHOL WHEAT PASTRY FLOUR
- 3/4 TEASPOONS BAKING SODA
- 1/8 TEASPOON SALT
- 1 1/2 CUPS FROZEN RASPBERRIES
Instructions
- PREHEAT OVEN TO 350°.
- IN A LARGE MIXER BOWL, COMBINE SUGAR, APPLESAUCE, BUTTERMILK, EGGS AND VANILLA, BLENDING WELL.
- STIR IN BANANAS AND MIX SLIGHTLY. ADD FLOUR, BAKING SODA AND SALT, MIX TOGETHER. ADD RASPBERRIES FOLDING IN GENTLY.
- SPOON BATTER INTO LIGHTLY SPRAYED MUFFIN CUPS. BAKE 25 TO 30 MINUTES OR UNTIL TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN. COOL
- *****NO BUTTERMILK ON HAND, YOU CAN SUBSTITUTE 1 TEASPOON LEMON JUICE OR VINEGAR PLUS ENOUGH SKIM MILK OR REGULAR MILK IN A GLASS MEASURING CUP TO EQUAL A 1/4 CUP.
