    RASPBERRY BANANA MUFFINS


    List of Ingredients


    • 1 1/4 CUPS SUGAR
    • 1/2 CUP UNSWEETENED APPLESAUCE
    • 1/4 CUP LOW FAT BUTTERMILK*****
    • 2 EGGS
    • 1 TEASPOON VANILLA
    • 2 LARGE RIPE MASHED BANANAS
    • 2 CUP WHOL WHEAT PASTRY FLOUR
    • 3/4 TEASPOONS BAKING SODA
    • 1/8 TEASPOON SALT
    • 1 1/2 CUPS FROZEN RASPBERRIES


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. IN A LARGE MIXER BOWL, COMBINE SUGAR, APPLESAUCE, BUTTERMILK, EGGS AND VANILLA, BLENDING WELL.
    3. STIR IN BANANAS AND MIX SLIGHTLY. ADD FLOUR, BAKING SODA AND SALT, MIX TOGETHER. ADD RASPBERRIES FOLDING IN GENTLY.
    4. SPOON BATTER INTO LIGHTLY SPRAYED MUFFIN CUPS. BAKE 25 TO 30 MINUTES OR UNTIL TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN. COOL
    5. *****NO BUTTERMILK ON HAND, YOU CAN SUBSTITUTE 1 TEASPOON LEMON JUICE OR VINEGAR PLUS ENOUGH SKIM MILK OR REGULAR MILK IN A GLASS MEASURING CUP TO EQUAL A 1/4 CUP.
