SPICY COCOA MUFFINS
List of Ingredients
- 1 3/4 CUPS FLOUR
- 3/4 CUPS SUGAR
- 6 TABLESPOONS UNSWEETENED COCOA POWDER
- 2 TEASPOONS BAKING POWDER
- 1/2 TEASPOON BAKING SODA
- 2 TEASPOONS GROUND CINNAMON
- 1/4 TEASPOON GROUND CLOVES
- 3/4 TEASPOONS SALT
- 2 EGGS, AT ROOM TEMPERATURE
- 1 CUP BUTTERMILK
- 1/2 CUP, 1 STICK SWEET BUTTER, MELTED AND COOLED
- 1/2 CUP FINELY CHOPPED PECANSS
- 1/2 CUP SEMI SWEET CHOCOLATE CHIPS
Instructions
- PREHEAT OVEN TO 400°. GREASE 12 ( 3") MUFFIN TINS AND SET ASIDE.
- IN A BOWL, COMBINE THE FLOUR, SUGAR, COCOA POWDER, BAKING POWDER, BAKING SODA, CINNAMON, CLOVES AND SALT. STIR TO BLEND WELL AND SET ASIDE.
- IN ANOTHER BOWL, COMBINE THE EGGS, BUTTERMILK AND MELTELD BUTTER. BEAT WELL. ADD THE FLOUR MIXTURE AND STIR JUST UNTIL THE INGREDIENTS ARE JUST BLENDED, FOLD IN NUTS AND CHOCOLATE CHIPS.
- SPOON THE MIXTURE INTO THE MUFFIN TINS, FILLING ABOUT 3/4 FULL.
- BAKE 15 MINUTES OR UNTIL A TESTER INSERTED IN CENTER OF MUFFIN COMES OUT CLEAN.
- REMOVE FROM OVEN AND COOL 5 MINUTES. REMOVE FROM TINS AND COOL ON A WIRE RACK.
