    LARGE DELI STYLE MUFFINS WITH A GREAT CRUNCHY SUGAR TOPPING. THIS RECIPE CAN EASILY BE DOUBLED.


    List of Ingredients


    • 1 1/2 CUPS FLOUR
    • 3/4 CUPS SUGAR
    • 1/2 TEASPOON SALT
    • 2 TEASPOON BAKING POWDER
    • 1/3 CUP MELTED BUTTER
    • 1 EGG
    • MILK
    • 1 TABLESPOON GRATED LEMON RIND
    • 1 CUP OR MORE FRESH BLUEBERRIES OR,SLIGHTLY THAWED FROZEN
    • ******************************************************************************
    • CRUMB TOPPING:
    • 1/2 CUP SUGAR
    • 1/3 CUP FLOUR
    • 1/4 CUP CUBED BUTTER OR MARGARINE
    • 1 1/2 TEASPOONS CINNAMON


    Instructions


    1. PREHEAT OVEN TO 400°.
    2. IN A LARGE BOWL, BLEND TOGETHER FLOUR, SUGAR, SALT, LEMON RIND AND BAKING POWDER.
    3. IN A 1 CUP MEASURING CUP, ADD THE EGG AND ENOUGH MILK TO MAKE ONE CUP.
    4. ADD LIQUID TO THE FLOUR MIXTURE AND MELTED BUTTER, MIXING WELL, ADD THE BLUEBERRIES AND STIR GENTLY TO INCORPORATE.
    5. POUR INTO LIGHTLY GREASED MUFFIN TINS AND BAKE FOR 20 TO 25 MINUTES, OR UNTIL A CAKE TESTER OR TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN.
