TROPICAL BANANA MUFFIN

- 2 CUPS FLOUR
- 1/4 CUP WHEAT GERM
- 1 TEASPOON BAKING POWDER
- 1 TEASPOON BAKING SODA
- 1/2 TEASPOON SALT
- 1 CUP MINI-SEMI-SWEET CHIPS

- 3 LARGE RIPE BANANAS
- 2 LARGE EGGS
- 3/4 CUPS SUGAR
- 1/2 CUP OIL
- 1/2 CUP BUTTERMILK
- 1 TEASPOON VANILLA
Instructions
- PREHEAT OVEN TO 350°. GREASE MUFFIN TINS WITH SHORTENING OR VEGETABLE SPRAY.
- MIX FLOUR, WHEAT GERM, BAKING SODA, BAKING POWDER AND SALT. MIX WELL AND STIR IN CHOCOLATE CHIPS AND SET ASIDE.
- IN A LARGER BOWL, MASH THE BANANAS TO MAKE 1 1/2 CUPS, BEAT IN EGGS, SUGR, OIL, BUTTERMILK AND VANILLA UNTIL SMOOTH AND WELL BLENDED.
- ADD FLOUR MIXTURE INTO BOWL AND STIR UNTIL MOISTENED "DO NOT OVER BEAT OR OVER MIX".
- POUR BATTER TO THE TOP OF MUFFIN TINS, BAKE IN OVEN UNTIL NICELY BROWNED AND CAKE TESTER INSERTED IN CENTER OF MUFFINS COMES OUT CLEAN, ABOUT 22 TO 30 MINUTES.
- YOU CAN SUBSTITUTE CRUSHED PINEAPPLE INSTEAD OF BANANAS
