    List of Ingredients


    • 1 3/4 CUPS FLOUR
    • 3/4 CUPS SUGAR
    • 2 TEASPOON BAKING POWDER
    • 1/4 TEASPOON BAKING SODA
    • 1/2 TEASPOON SALT
    • 1/4 CUP UNSWEETENED GRATED COCONUT
    • 3 MEDIUM SIZE RIPE BANANAS, MASHED
    • 1/3 CUP BUTTER OR MARGARINE, MELTED
    • 1 EGG BEATEN
    • 1 TEASPOON GRATED ORANGE RIND
    • 1/3 CUP UNSWEETENED ORANGE JUICE
    • VEGETABLE COOKING SPRAY


    Instructions


    1. PREHEAT OVEN TO 375°. COAT MUFFIN PANS WITH VEGETABLE COOKING SPRAY AND SET ASIDE.
    2. SIFT TOGETHER FLOUR, SUGAR, BAKING POWDER, SODA AND SALT IN A LARGE BOWL, STIR IN COCONUT AND MAKE A WELL IN CENTER OF MIXTURE.
    3. COMBINE BANANAS, BUTTER OR MARGARINE, EGG, ORANGE RIND AND ORANGE JUICE, MIX WELL TO BLEND. ADD TO DRY INGREDIENTS AND STIR JUST UNTIL ALL DRY INGREDIENTS ARE MOISTENED.
    4. SPOON BATTER INTO MUFFIN TINS, FILLING 2/3 FULL AND BAKE FOR 25 TO 30 MINUTES OR UNTIL LIGHTLY BROWN.
