TROPICAL MUFFINS # 2
List of Ingredients
- 2 1/4 CUPS FLOUR
- 1/4 CUP SUGAR
- 1 TEASPOON BAKING POWDER
- 6 TABLESPOONS SWEET BUTTER
- 1 1/2 CUPS PINEAPPLE, CRUSHED
- 1 TEASPOON VANILLA
- 1/2 TEASPOON COCONUT EXTRACT
Instructions
- PREHEAT OVEN TO 375°. SPRAY 12 MUFFIN CUPS WITH COOKING SPRAY.
- COMBINE FLOUR, SUGAR AND BAKING POWDER, CUT IN BUTTER UNTIL MIXTURE RESEMBLES COARSE MEAL.
- ADD PINEAPPLE, VANILLA AND COCONUT EXTRACTS. STIR UNTIL MIXTURE FORMS A STICKY DOUGH AND LEAVES SIDES OF BOWL, DO NOT OVER MIX.
- DIVIDE BATTER AMONG 12 MUFFIN CUPS.
- BAKE UNTIL GOLDEN BROWN ABOUT 30 TO 35 MINUTES OR UNTIL TESTER COMES OUT CLEAN. REMOVE TO A WIRE RACK AND COOL. SERVE IMMEDIATELY OR FREEZE.
