EASY STRUDEL
List of Ingredients
- 1 /2 LB SWEET BUTTER
- 2 CUPS FLOUR
- 2 TABLESLPOONS WATER
- 2 TABLESPOONS VINEGAR
- 3 EGG YOLKS
- CHEESE FILLING:
- 1 LB DRY COTTAGE CHEESE, YOU CAN STRAIN COTTAGE OVERNIGHT IN A CONE SHAPE COFFEE FILTER
- 1 EGG
- 1/3 CUP SUGAR
- 1/2 TEASPOON LEMON JUICE
- 1/4 TEASPOON VANILLA
- APPLE FILLING
- 4 COOKING APPLES
- 1 CUP SUGAR
- 1 TEASPOON CINNAMON
- 3 TABLESPOONS FLOUR
Instructions
- CHEESE FILLING:
- PLACE ALL INGREDIENTS IN AN ELECTRIC MIXER BOWL AND BEAT UNTIL SMOOTH.
- APPLE FILLING:
- PARE AND SLICE APPLES AND MIX WITH SUGAR, CINNAMON AND FLOUR. COOK TOGETHER UNTIL APPLES ARE SOFT.
- DOUGH:
- CUT BUTTER INTO FLOUR AS FOR PIE CRUST. ADD WATER, VINEGAR AND EGG YOLKS. MIXING WELL, REMOVE TO A LIGHTLY FLOURED BOARD AND KNEAD UNTIL SMOOTH. THIS CAN BE DONE IN A FOOD PROCESSOR.
- SHAPE INTO 3 BALLS AND CHILL 2 TO 3 HOURS OR OVERNIGHT.
- ROLL OUT EACH BALL INTO A RECTANGLE. SPREAD DESIRED FILLING OVER DOUGH AND ROLL UP IN A JELLY ROLL FASHION.
- PLACE SEAMSIDE DOWN ON A GREASED COOKIE SHEET AND BAKE IN A PREHEATED 375° OVEN FOR 30 MINUTES.
- REMOVE VERY CAREFULLY FROM SHEET. WHILE STILL WARM, DUST WITH CONFECTIONERS' SUGAR
