    • 1 /2 LB SWEET BUTTER
    • 2 CUPS FLOUR
    • 2 TABLESLPOONS WATER
    • 2 TABLESPOONS VINEGAR
    • 3 EGG YOLKS
    • CHEESE FILLING:
    • 1 LB DRY COTTAGE CHEESE, YOU CAN STRAIN COTTAGE OVERNIGHT IN A CONE SHAPE COFFEE FILTER
    • 1 EGG
    • 1/3 CUP SUGAR
    • 1/2 TEASPOON LEMON JUICE
    • 1/4 TEASPOON VANILLA
    • APPLE FILLING
    • 4 COOKING APPLES
    • 1 CUP SUGAR
    • 1 TEASPOON CINNAMON
    • 3 TABLESPOONS FLOUR


    Instructions


    1. CHEESE FILLING:
    2. PLACE ALL INGREDIENTS IN AN ELECTRIC MIXER BOWL AND BEAT UNTIL SMOOTH.
    3. APPLE FILLING:
    4. PARE AND SLICE APPLES AND MIX WITH SUGAR, CINNAMON AND FLOUR. COOK TOGETHER UNTIL APPLES ARE SOFT.
    5. DOUGH:
    6. CUT BUTTER INTO FLOUR AS FOR PIE CRUST. ADD WATER, VINEGAR AND EGG YOLKS. MIXING WELL, REMOVE TO A LIGHTLY FLOURED BOARD AND KNEAD UNTIL SMOOTH. THIS CAN BE DONE IN A FOOD PROCESSOR.
    7. SHAPE INTO 3 BALLS AND CHILL 2 TO 3 HOURS OR OVERNIGHT.
    8. ROLL OUT EACH BALL INTO A RECTANGLE. SPREAD DESIRED FILLING OVER DOUGH AND ROLL UP IN A JELLY ROLL FASHION.
    9. PLACE SEAMSIDE DOWN ON A GREASED COOKIE SHEET AND BAKE IN A PREHEATED 375° OVEN FOR 30 MINUTES.
    10. REMOVE VERY CAREFULLY FROM SHEET. WHILE STILL WARM, DUST WITH CONFECTIONERS' SUGAR
