    BIG BOY STRAWBERRY PIE

    THIS PIE IS VERY SIMILAR TO THE STRAWBERRY PIES THAT ARE SERVED AT THE BIG BOY RESTAURANTS. THIS IS A FRESH STRAWBERRY PIE, YOU DO NOT COOK THE FRUIT.


    List of Ingredients


    • 1 CUP WATER
    • 3/4 CUP SUGAR
    • 1/4 TEASPOON SALT
    • 2 TABLESPOONS CORNSTARCH
    • 1/4 TEASPOON RED FOOD COLORING
    • 1 CUP FLOUR
    • 1/2 CUP MARGARINE
    • 3 TABLESPOONS CONFECTIONERS' SUGAR
    • 1 TEASPOON VANILLA EXTRACT
    • 1 3/4 CUP STEMMED AND WASHED FRESH STRAWBERRIES ( 1 QUART)


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. MIX TOGETHER THE WATER, SUGAR, SALT, CORNSTARCH AND FOOD COLORING AND COOK IN A SAUCEPAN FOR ABOUT 5 MINUTES OR UNTIL THICKENED. SET ASIDE TO COOL.
    3. MAKE THE CRUST WHILE THE SAUCE IS COOLING.
    4. COMBINE THE FLOUR, MARGARINE, SUGAR AND VANILLA. PRESS THIS INTO A 9" PIE PAN.
    5. PRICK ALL OVER AND BAKE IN OVEN UNTIL LIGHTLY BROWNED, ABOUT 5 TO 9 MINUTES. WATCH VERY CLOSELY AS NOT TO OVER BROWN.
    6. WHEN CRUST IS COOL, ARRANGE STRAWBERRIES IN THE PIE SHELL, EVENLY POUR THE THICKENED SAUCE OVER THE TOP . REFRIGERATE FOR SEVERAL HOURS.
    7. SERVE SLICES WITH A DALLOP OF FRESH WHIPPED CREAM OR WITH THAWED COOL WHIP.
    8. 6 TO 8 SERVINGS
