    List of Ingredients


    • 1 FROZEN PIE CRUST, BAKED
    • 1 ENVELOPE UNFLAVORED GELATIN
    • 1/4 CUP COLD WATER
    • 1 ( 6 OZ.) PACKAGE SEMI SWEET CHOCOLATE PIECES
    • 3 TABLESPOONS SUGAR
    • 1/4 TESPOON CINNAMON
    • 2 TEASPOONS INSTANT COFFEE POWDER
    • 1/8 TEASPOON SALT
    • 1/4 CUP SHERRY
    • 4 EGGS
    • 1/2 CUP HEAVY CREAM, WHIPPED
    • 3 MEDIUM RIPE BANANAS


    Instructions


    1. IN A BOWL COMBINE GELATIN AND COLD WATER, SET ASIDE.
    2. IN TOP OF DOUBLE BOILER COMBINE CHOCOLATE PIECES, SUGAR, CINNAMON, COFFEE POWDER, SALT AND SHERRY.
    3. PLACE OVER HOT WATER. COOK AND STIR UNTIL CHOCOLATE MELTS. REMOVE FROM HEAT. BEAT IN EGGS, ONE AT A TIME, UNTIL THOROUGHLY BLENDED. RETURN TO HEAT AND COOK 2 MINUTES LONGER OR UNTIL SLIGHTLY THICKENED. STIR IN SOFTENED GELATIN MIXTURE UNTIL DISSOLVED. CHILL IN REFRIGERATOR UNTIL IT BECOMES THE CONSISTENCY OF UNBEATEN EGG WHITES. FOLD IN WHIPPED CREAM.
    4. PEEL AND SLICE 2 BANANAS. SPRINKLE LIGHTLY WITH ADDITIONAL SHERRY.
    5. ARRANGE BANANAS IN BOTTOM OF BAKED AND CHILLED PIE SHELL. SPOON CHOCOLATE FILLING ON TOP, REFRIGERATE SEVERAL HOURS UNTIL FIRM.
    6. WHEN REDY TO SERVE, PEEL AND SLICE THE REMAINING BANANA AND ARRANGE ON TOP OF PIE.

    IT TAKES A BIT MORE TIME TO MAKE, BUT IS WORTH THE EFFORT.
