- 1 FROZEN PIE CRUST, BAKED
- 1 ENVELOPE UNFLAVORED GELATIN
- 1/4 CUP COLD WATER
- 1 ( 6 OZ.) PACKAGE SEMI SWEET CHOCOLATE PIECES
- 3 TABLESPOONS SUGAR
- 1/4 TESPOON CINNAMON
- 2 TEASPOONS INSTANT COFFEE POWDER
- 1/8 TEASPOON SALT
- 1/4 CUP SHERRY
- 4 EGGS
- 1/2 CUP HEAVY CREAM, WHIPPED
- 3 MEDIUM RIPE BANANAS
Instructions
- IN A BOWL COMBINE GELATIN AND COLD WATER, SET ASIDE.
- IN TOP OF DOUBLE BOILER COMBINE CHOCOLATE PIECES, SUGAR, CINNAMON, COFFEE POWDER, SALT AND SHERRY.
- PLACE OVER HOT WATER. COOK AND STIR UNTIL CHOCOLATE MELTS. REMOVE FROM HEAT. BEAT IN EGGS, ONE AT A TIME, UNTIL THOROUGHLY BLENDED. RETURN TO HEAT AND COOK 2 MINUTES LONGER OR UNTIL SLIGHTLY THICKENED. STIR IN SOFTENED GELATIN MIXTURE UNTIL DISSOLVED. CHILL IN REFRIGERATOR UNTIL IT BECOMES THE CONSISTENCY OF UNBEATEN EGG WHITES. FOLD IN WHIPPED CREAM.
- PEEL AND SLICE 2 BANANAS. SPRINKLE LIGHTLY WITH ADDITIONAL SHERRY.
- ARRANGE BANANAS IN BOTTOM OF BAKED AND CHILLED PIE SHELL. SPOON CHOCOLATE FILLING ON TOP, REFRIGERATE SEVERAL HOURS UNTIL FIRM.
- WHEN REDY TO SERVE, PEEL AND SLICE THE REMAINING BANANA AND ARRANGE ON TOP OF PIE.
Final Comments
IT TAKES A BIT MORE TIME TO MAKE, BUT IS WORTH THE EFFORT.
