    • 2 CUPS FLOUR
    • 1 TEASPOON SALT
    • 2/3 CUP SHORTENING
    • 6 TO 7 TABLESPOONS COLD WATER
    • 1 ( 1 LB.5 OZ.) CAN APPLE PIE FILLING
    • 1/4 TEASPOON CINNAMON
    • 1/4 TEASPOON NUTMEG
    • 1 TEASPOON GRATED LEMON RIND
    • 1 TABLESPOON LEMON JUICE
    • 1/3 CUP SUGAR
    • 1 EGG
    • 1 ( 3 OZ.) PACKAGE CREAM CHEESE
    • 1/4 CUP SOUR CREAM


    Instructions


    1. FOR PASTRY:
    2. COMBINE FLOUR AND SALT IN MIXING BOWL, CUT IN SHORTENING TILL MIXTURE IS FINE. SPRINKLE WATER OVER MIXTURE, TOSSING LIGHTLY WITH FORK TILL DOUGH HOLDS TOGETHER. DIVIDE IN HALF. FLATTEN TO 1/2" THICKNESS, SMOOTH EDGES. ROLL OUT PORTION ON FLOURED BOARD TO CIRCLE 1 1/2" LARGER THAN AN INVERTD 9" PIE PAN. FIT DOUGH LOOSELY INTO PAN. SET ASIDE
    3. COMBINE PIE FILLING WITH SPICES AND LEMON RIND. SPOON INTO PREPARED DOUGH.
    4. COMBINE REMAINING INGREDIENTS, BEAT TILL SMOOTH. POUR OVER APPLES.
    5. ROLL OUT REMAINING DOUGH, FIT OVER PIE. CUT SLITS IN TOP FOR STEAM TO ESCAPE. SPRINKLE WITH ADDITIONAL SUGAR
    6. BAKE IN A PREHEATED 425° OVEN FOR 25 TO 30 MINUTES. REMOVE AND COOL.
