    THIS IS A VERY REFRESHING DESSERT TO SERVE ON A HOT DAY OR ANYTIME. DON'T KNOW WHERE I GOT THIS RECIPE FROM, ALL I KNOW IS THAT IT IS DELICIOUS.


    List of Ingredients


    • 8 OUNCES CREAM CHEESE, SOFTENED
    • 1/2 CUP HELLMANNS REAL MAYONNAISE
    • 1/2 CUP SUGAR
    • 3 EGGS
    • 1 TEASPOON VANILLA
    • 2 TEASPOONS LEMON RIND, GRATED
    • 1 TABLESPOON LEMON JUICE
    • 1 GRAHAM CRACKER PIE CRUST


    Instructions


    1. IN A LARGE MIXING BOWL BEAT AT MEDIUM SPEED THE CREAM CHEESE AND MAYONNAISE UNTIL SMOOTH, GRADUALLY BEAT IN SUGAR. BEAT IN EGGS, ONE AT A TIME, BEAT IN LEMON RIND, LEMON JUICE AND VANILLA.
    2. POUR INTO PIE CRUST AND PLACE ON A COOKIE SHEET.
    3. BAKE IN A PREHEATED 350° OVEN FOR APPROXIMATELY 30 TO 45 MINUTES OR UNTIL SET. REMOVE FROM OVEN AND COOL.
    4. REFRIGERATE FOR 4 HOURS OR OVERNIGHT.
