MOCK APPLE PIE
List of Ingredients
- 36 RITZ CRACKERS
- 1 3/4 CUPS WATER
- 2 CUPS SUGAR
- 2 TEASPOONS CREAM OF TARTAR
- 2 TABLESPOONS LEMON JUICE
- 1 GRATED LEMON
- 2 TABLESPOONS BUTTER
- 1/2 TEASPOON CINNAMON
- 2 ( 9") READY PIE CRUSTS IN THE DAIRY DEPARTMENT
Instructions
- PREHEAT OVEN TO 425°.
- BREAK CRACKERS INTO COARSE PIECES AND PLACE IN ONE OF THE CRUSTS.
- COMBINE WATER, SUGAR AND CREAM OF TARTAR IN A SAUCEPAN BRING TO A BOIL, LET SIMMER FOR 15 MINUTES MIXING OCCASIONALLY. ADD LEMON JUICE, RIND AND CINNAMON. COOL.
- POUR THIS SYRUPY MIXTURE OVER THE CRACKERS. DOT WITH BUTTER.
- COVER WITH REMAINING CRUST, TRIM, SEAL AND MAKE A COUPLE OF SLITS WITH A KNIFE FOR STEAM TO ESCAPE.
- BAKE FOR 30 TO 35 MINUTES OR UNTIL CRISP AND GOLDEN.
