    • 36 RITZ CRACKERS
    • 1 3/4 CUPS WATER
    • 2 CUPS SUGAR
    • 2 TEASPOONS CREAM OF TARTAR
    • 2 TABLESPOONS LEMON JUICE
    • 1 GRATED LEMON
    • 2 TABLESPOONS BUTTER
    • 1/2 TEASPOON CINNAMON
    • 2 ( 9") READY PIE CRUSTS IN THE DAIRY DEPARTMENT


    Instructions


    1. PREHEAT OVEN TO 425°.
    2. BREAK CRACKERS INTO COARSE PIECES AND PLACE IN ONE OF THE CRUSTS.
    3. COMBINE WATER, SUGAR AND CREAM OF TARTAR IN A SAUCEPAN BRING TO A BOIL, LET SIMMER FOR 15 MINUTES MIXING OCCASIONALLY. ADD LEMON JUICE, RIND AND CINNAMON. COOL.
    4. POUR THIS SYRUPY MIXTURE OVER THE CRACKERS. DOT WITH BUTTER.
    5. COVER WITH REMAINING CRUST, TRIM, SEAL AND MAKE A COUPLE OF SLITS WITH A KNIFE FOR STEAM TO ESCAPE.
    6. BAKE FOR 30 TO 35 MINUTES OR UNTIL CRISP AND GOLDEN.
